- Sauce:
- 1/2 package bacon, 1/4 inch slices
- 1 pound hamburger
- 1 Portuguese sausage, chopped
- 3-4 hot dogs, chopped
- 1 round onion, diced
- 3 cans pork and beans
- 1 can black beans
- 3/4 cup brown sugar
- 3/4 cup ketchup
- 1 tsp Coleman's dry mustard
- 1 tsp Worcestershire
- Cheddar cheese
Beef Pepper Steak

Cut the meat and vegetables
- 2 lbs. Top round steak, Sirloin steak, or Chuck eye steaks sliced into 1/4-in. thick x 3-in. long pieces
- 4 tsp. Vegetable oil
- 2 medium Onions, sliced into wedges
- 6 Garlic cloves, minced
- 2 cup Beef broth
- 1/2 cup Soy sauce (I used Kikkoman soy sauce)
- 1/2 tsp. Sugar
- 1/2 tsp. Salt
- 1 1/2 tsp. ground Black pepper
- 1 tsp. Accent seasoning
- 3 stalks Celery, 1/2-inch slices
- 2 green Bell peppers, sliced
- 2 medium Tomatoes, cut into wedges
- 4 tsp. Cornstarch
- 1/2 cup Cold water

In a large pot Mix and Cook all ingredients
- Sofrito (all ingredients chopped)--makes 1 cup:
- 3 oz. vegetable oil
- 1/2 can gandules
- 1 (8 oz.) cans tomato sauce
- 2 envelopes sazon with culantro & achoite
- 1 envelope ham flavoring
- 1 teaspoon chicken bouillon
- 4 oz. smoked ham, cut in squares and fried until browned
- 3 oz. green olives stuffed with pimento plus all the liquid
- 1 teaspoon Adobo seasoning
- 1/2 teaspoons ground pepper
- 1 teaspoon cumin
- 3/4 teaspoon salt

- 1 small yellow onion
- 1 medium green pepper
- 2 cloves garlic
- 1 bunch Chinese parsley
- ...........................................
- 4 cups medium grain rice
- 3 cups water
Tomato and Beef

In a big frying pan, spray non-stick cooking oil
- 1 pound Beef, (use good cut of meat, like sirlon tips)
- 2 small Tomatoes, (1 pound)
- 2 cloves Garlic
- 1 Tbsp Chinese cooking wine
- 1 tsp Soy Sauce
- 1 tsp Oyster sauce
- 2 Tbsp Ketchup
- 1 tsp Sugar
- 1 Tbsp Cornstarch
- dash of Salt
- dash of White pepper
- 1 tsp Vinegar, (optional)

Cut pork into cubes (about 2 inch cubes or to desired size)
- 3 lbs. boneless pork
- 1 1/2 cups vinegar
- 2 cloves garlic (minced or pressed)
- 6 Hawaiian chili peppers (seeded and chopped) *can be substituted with another type of hot pepper like jalapeno*
- 1 bay leaf (crushed)
- 2 teaspoons salt
- 6 whole cloves
- 1/4 teaspoon thyme
- 1/8 teaspoon sage
- 2 tablespoons olive oil
Short Ribs

- 2 tablespoon Tomato paste
- 3 cup beef stock
- 2 tablespoon olive oil
- 0 Salt & Pepper
- 1 carrot, diced
- 1 onion, diced
- 1 shallot, minced
- 2 clove garlic, minced
- 1 stalk celery, diced
- 1 cup red wine
- 2 Sprig thyme
