Italian No Bake Cake

Layer the bottom of dish with Vanilla Wafers
- 1 Box Vanilla Wafers
- 1 Can Crushed Pineapples with Juice
- 1/4 cup Lemon Juice
- 1 can sweetened condensed milk
- 1 package coconut
- 1 (8 oz) Container Cool Whip
- 1 small jar of cherries
- 1 cup pecans (optional)
Boricua Burger

Mix well and refrigerate at least 2 hours before making burgers
- Burger Mixture:
- 1 lb lean ground beef
- 2 lbs ground pork
- 2 tsp smoked paprika
- 2 tsp ground oregano
- 2 tsp ground annatto
- 1 tsp garlic powder
- 2 tsp smoked paprika
- 1 tsp black pepper
- 1 tsp Adobo seasoning
- 1 tblsp sofrito
- .........................
- American cheese slices
- Lettuce
- Tomato slices
- Potato Sticks
- Ketchup/Mayonnaise Dressing
- Burger buns
Mexican Spaghetti

Bring a pot of water to a boil and cook spaghetti according to pkg
- 6 oz. thin spaghetti
- 1 lb. ground beef
- 1 small onion, chopped
- 1/2 bell pepper, chopped
- 1 small can of whole kernel corn, drained
- 1 pkg. taco seasoning
- 3/4 C. water
- 1/2 C. salsa, or more
- 1 1/2 C. shredded Colby jack cheese
Caramel Banana Cream Tiramisu

Combine pudding mix and cold milk in a medium bowl and whisk to thicken
- 1 cup Caramel dip or ice cream topping
- 1 (3.4 ounce) package instant banana pudding
- 1 cup cold milk
- 1/2 cup sour cream
- 1 8 oz container whipped topping
- 1 1/2 sleeves of graham crackers
- 2-4 ripe bananas, peeled and sliced { I ended up using 4 small bananas}
- Ground cinnamon, for sprinkling on top
Baked Crispy Chicken

If using chicken breasts and not tenders, cut each chicken breast into 3 large pieces
- Sauce:
- 2 lbs chicken tenders or 4 large chicken breasts
- 2 sleeves Ritz crackers, crushed
- 1/4 teaspoons salt
- 1/8 teaspoon pepper
- 1/2 cup whole milk
- 3 cups cheddar cheese, grated
- 1 teaspoon dried parsley
- 1 10 ounce can cream of chicken soup
- 2 tablespoon sour cream
- 2 tablespoon butter
Olive Garden Salad Dressing

Mix all ingredients in a bender until well mixed
- 1/2 cup mayonnaise
- 1/3 cup white vinegar
- 1 teaspoon vegetable or oil
- 2 Tablespoons corn syrup
- 2 tablespoons Parmesan cheese
- 2 tablespoons Romano cheese
- 1/4 teaspoon garlic salt
- 1 //2 teaspoon Italian seasoning
- 1/2 teaspoon parsley flakes
- 1 tablespoon lemon juice
Smothered Chicken

Preheat oven to 350 degrees F
- 3 cups sliced mushrooms FRESH OR canned
- 2 sweet onions sliced (add a little garlic to the onions and mushrooms when you saute them)
- 1 Tbs butter
- 1 can cream of mushroom soup
- 4 skinless, boneless chicken breast halves
- 2 eggs, beaten
- 1 cup seasoned bread crumbs
- 2 tablespoons butter
- 3 cups mozzarella cheese, Shredded
- 3/4 cup chicken broth
- salt pepper and garlic to taste
Blueberry Jello Salad

1 – Drain the pineapple juice into a one (1) cup measuring cup
- 1 can (16-ounces) crushed pineapple (reserved drained juice)**
- 1 cup boiling water
- 2 boxes (3 ounces) of grape or berry-blue JELL-O gelatin (can substitute sugar-free JELL-O)*
- 1 can (16-ounces) blueberry pie filling
- 1/2 cup fresh blueberries, washed
- 1/4 cup chopped pecans
Smoky Grilled Chicken with Easy Rice & Beans

Place chicken, chipotle pepper, adobo sauce, lemon juice, orange juice, Adobo and paprika in gallon zip-top bag
- 4 pounds Chicken Thighs
- 1 chipotle pepper, seeded and finely chopped, plus 2 tbsp.
- sauce from 1 can (7 oz.) Chipotle Chiles in
- Adobo Sauce
- 1/4 cup Lemon Juice
- 1/4 cup orange juice
- 2 tsp. GOYA® Adobo All-Purpose Seasoning with Pepper
- 1 tsp. smoked paprika
- 1 lb. mini sweet bell peppers
- 1 large red onion, sliced into 3/4" rounds
- 1 (15 oz.) can Red Kidney Beans in Sauce, heated
- 1 cup Extra Long Grain Rice, cooked according
- to package directions, for serving
- 3 tbsp. chopped cilantro (optional)
Tropical Twinkie Trifle

Pour drained pineapple in bottom of pans, next place the Twinkies on top
- 1 – 20 oz can Crushed Pineapple (drained)
- 1 box (10 cakes) – “Twinkies” snack cakes
- 2 boxes (3.4 oz) Instant Banana Pudding
- 1 can (21 oz) Strawberry Pie Filling
- 3 ripe bananas , cut to your liking
- 1 – 8 oz container Cool Whip (or whipping cream)
- Toasted Coconut (optional)
- Chocolate syrup (optional)
- Chopped Nuts of your choice(optional)
- Maraschino Cherries (optional)
- This recipe filled 2 loaf pans (9 x 5 1/2)
