Chicken Succotash Pot Pie

Heat oven to 400°F. In 10-inch cast-iron or other ovenproof skillet, melt 2 tablespoons butter over medium heat
- 2 tablespoons butter
- 1 large onion, chopped (1 cup)
- 1 medium red bell pepper, chopped (1 cup)
- 2 cloves garlic, finely chopped
- 1 cup fresh or frozen (thawed) corn
- 1 cup Cascadian Farm® frozen organic shelled edamame, thawed
- 1 cup Progresso® chicken broth (from 32-oz container)
- 2 cups shredded deli rotisserie chicken (from 2-lb chicken)
- 1/2 teaspoon coarse ground black pepper
- 1 can (10 3/4 oz) condensed cream of chicken soup
- 2 1/2 cups Original Bisquick® mix
- 1/4 cup cold butter
- 1 cup shredded Asiago cheese (4 oz)
- 1 cup sour cream
- 2 tablespoons chopped fresh basil
Cranberry-Coconut Bread Pudding Pie

1. Put dried cranberries and spiced rum in a microwave-safe bowl
- 1 cup sweetened dried cranberries
- 1/2 cup spiced rum or water
- 3 large eggs plus 3 large egg yolks
- 3/4 cup sugar
- 2 tsp vanilla extract
- 1/2 tsp each salt and ground nutmeg
- 2 cups heavy cream
- 1 3/4 cup milk
- One 8-oz loaf Italian bread (preferably day-old)
- 1 cup sweetened flaked coconut
- Cranberry-Rum Sauce (recipe follows)
Cheddar Turkey Casserole

Cook pasta according to package directions
- 4 cups uncooked spiral pasta
- 1 garlic clove, minced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon prepared mustard
- 1/4 teaspoon dried thyme
- 1/4 teaspoon pepper
- 2 cups 2% milk
- 1-1/2 cups (6 ounces) shredded cheddar cheese
- 2 cups cubed cooked turkey
- 2 cups frozen mixed vegetables, thawed
- 1/2 cup slivered almonds
Basic Marinade for Chicken or Beef

Combine all ingredients in a jar or other container that has a lid
- 1 1/2 cups vegetable oil
- 1/2 cup soy sauce
- 1/2 cup white wine or balsamic vinegar
- 1/3 cup lemon juice
- 1/4 cup Worcestershire sauce
- 2 tablespoons ground dry mustard
- 2 1/4 teaspoons salt
- 1 tablespoon ground black pepper
- 1 1/2 tablespoons chopped fresh parsley

Crumble ground beef evenly over bottom of a 3 1/2-quart crock pot
- 1/2 pound lean ground beef
- 2 tablespoons imitation bacon bits
- 1 small onion, chopped
- 1 small can tomato sauce
- 1/2 cup water
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2/3 cup long-grain rice
- 1 can whole kernel corn, drained
- 1/2 cup chopped green bell pepper

- 4 teaspoons sesame oil
- 2 tablespoons honey
- 3 slices fresh ginger root
- 2 cloves garlic, crushed

*Sift dry ingredients twice and set aside
- 1 box of white cake mix (I used DH)
- 1 cup of cake flour
- 1/2 cup of white granulated sugar2 teaspoons baking power
- 1 envelope dry pistachio pudding mix
- 1 teaspoon of salt (*If using salted pistachios omit salt).
- 1 teaspoon of grind cardamom.
- 1 cup of sour cream
- 1 stick of butter (at room temp.)
- 1/4 cup of veg. oil
- 1/3 cup of cream cheese at room temp.
- 1/4 cup of brown sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- Lorann pistachio oil flavor
- 1/2 cup of vanilla caramel coffee creamer
- 1/2 cup of caramel ice cream topping
- 3/4 cup of buttermilk
- 1 cup of chopped pistachios
Peppered Portobello Penne

- 2 cups uncooked penne pasta
- 4 large portobello mushrooms, stems removed, halved and thinly sliced
- 2 tablespoons olive oil
- 1/2 cup heavy whipping cream
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup (4 ounces) shredded pepper Jack cheese
