Bean and Cheese Enchiladas

This hot and spicy Mexican dinner recipe can be on the table in less than 30 minutes
- 1 can (15 ounces) red kidney beans, drained and rinsed
- 1 can (4 ounces) diced green chile peppers, drained
- 1/2 cup frozen whole kernel corn, thawed
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 2 cups shredded pepper-Jack cheese (10 ounces)
- 1 can (10 ounces) hot enchilada sauce
- 1 can (10 ounces) mild enchilada sauce
- 8 (6 1/2-inch) fajita-size flour tortillas
- Fresh cilantro sprigs, for garnish (optional)
How to Make Homemade Hamburger Helper

Brown ground beef in a large skillet; drain
- Chili Cheese Hamburger Helper:
- 1 pound ground beef
- 1 cup hot water
- 2 cups milk
- 1 1/2 cups elbow macaroni
- 1 tablespoon corn starch
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon paprika
- 1 cup cheddar cheese, shredded

Chili Beef Soup

In a soup pot over medium heat, brown ground beef and onion 5 to 7 minutes
- 1/2 pound ground beef
- 1 onion, chopped
- 1 (14-1/2-ounce) can diced tomatoes, undrained
- 1 1/2 cups water
- 1 (16-ounce) can kidney beans, undrained
- 1 (8-ounce) can whole kernel corn, drained
- 1 (8-ounce) can tomato sauce
- 1 tablespoon chili powder
- 2 teaspoons salt
- 4 ounce can diced green chiles
- 1/2 cup pickled jalapeno peppers, diced
Vegetarian Chili

1. Drain beans and set aside
- Optional garnishes:
- 1 cup (approximately 8 ounces) dried black beans,
- soaked one hour in boiling water
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 clove garlic, peeled and minced
- 1 medium green pepper, cored, seeded and chopped
- 1 medium red pepper, cored, seeded and chopped
- 1 jalapeño pepper, cored seeded and chopped
- 2 carrots, chopped
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 1/2 teaspoon dried oregano
- 1 (14.5-ounce) can diced tomatoes
- 1 cup water
- salt
- 2 tablespoons minced fresh cilantro
- Chopped black olives
- Sour cream
- Shredded cheddar cheese
Chicken and Bow Ties

1.Cook pasta according to package directions; drain
- 8 ounces dried bow tie pasta
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 lb. skinless, boneless chicken breast halves, cut into thin bite-size strips
- 1 teaspoon dried basil, crushed
- 1/8 teaspoon crushed red pepper
- 3/4 cup chicken broth
- 1/2 cup oil-packed dried tomatoes, drained and cut into thin strips
- 1/4 cup dry white wine
- 1/2 cup whipping cream
- 1/4 cup grated Parmesan cheese
- Grated Parmesan cheese (optional)
Browned Butter Island Cookies (talkchowplayhouse)

Drop onto a cookie sheet & BAKE 375° for 9-11 minutes
- In a saucepan over med. heat melt:
- 1 1 1 cup (2 sticks) salted butter
- In the bowl of an electric mixer mix well:
- 1 1/4 1 1/4 1/4 cups brown sugar
- 1/4 1/4 1/4 cup granulated sugar
- 1 1 1 cup cooled browned butter
- Add and mix well:
- 2 2 2 large eggs
- 2 2 2 teaspoons vanilla
- Add and mix just until incorporated:
- 2 3/4 2 3/4 3/4 cups flour
- 1 1/2 1 1/2 1/2 teaspoons baking soda
- 1/2 1/2 1/2 teaspoon kosher salt
- Add and mix well:
- 3/4 3/4 11 of an 11 oz package of butterscotch morsels
- 1 1 1 cup firmly packed sweetened, shredded coconut
Slow Cooker French Onion Beef

1) Spray 3 1/2-4 quart slow cooker with cooking spray
- 1 1/4 lb boneless beef round steak (1/2 to 3/4 inch thick)
- 1 package (8 oz) sliced fresh mushrooms (3 cups)
- 1 large onion, sliced, separated into rings
- 1 can (10 1/2 oz) condensed French onion soup
- 1 package (6 oz) 10-minute herb stuffing mix
- 1/4 cup butter or margarine, melted
- 1 cup shredded mozzarella cheese (4 oz)
