Artichoke Dip

1. Heat oven to 350 degrees F
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1/4 teaspoon each salt and pepper
- 1/8 teaspoon ground nutmeg
- 1 cup shredded Swiss cheese
- 4 ounces cream cheese, cut up
- 2 14 ounce can artichoke hearts, drained
- 1/2 10 ounce package frozen chopped spinach, thawed and squeezed dry
- 2 cloves garlic, peeled
- 1/4 cup grated Asiago or Parmesan cheese
- Pinch cayenne pepper
- Endive leaves and crackers, for serving
Honey Baked Ham

Preheat your oven to 375° (191°C)
- 1 spiral-sliced ham (I prefer Smithfield 12-14 lbs.)
- Many toothpicks or cloves
- 1 can pineapple sliced, juice reserved (optional)
- 1 jar maraschino cherries, juice reserved (optional)
- 2 tbsp. apple cider vinegar
- 1/4 cup Dom from Guam Marinade or soy sauce
- 1/2 cup orange juice
- Bunch whole cloves
- 1 cup honey
- 1/4 tsps. Ground cloves
- 2 tbsp. French’s yellow mustard
Italian Club Bake

Preheat oven to 350 degrees F
- 1 (8-ounce) container refrigerated crescent rolls
- 8 slices deli turkey
- 8 slices deli ham
- 8 slices cooked bacon
- 8 slices provolone cheese
- 1 (12-ounce) jar roasted peppers, drained and sliced
- 1 teaspoon Italian seasoning, divided
- 1 egg, lightly beaten
Creamy Swiss Chicken Breasts

Place chicken breasts in bottom of baking dish then arrange layer of Swiss cheese on top
- 6 boneless chicken breasts
- 8 thin slices Swiss cheese
- 2 cans cream of chicken soup
- 3 cups crushed seasoned croutons
- 3/4 cup melted butter
Corky's Cole Slaw

Mix vegetables in a bowl. Mix remaining ingredients in another
- 1 med. head green cabbage, shredded
- 2 med. carrots. grated
- 1 green pepper finely diced
- 2 TBS onion, grated
- 2 cups mayonnaise
- 3/4 cup sugar
- 1/4 cup Dijon mustard
- 1/4 cup cider vinegar
- 2 TBS celery seeds
- 1 tsp. salt
- 1/8 tsp. white pepper
David Venable's Cheesy Cheeseburger Casserole *(GOOD)*

Preheat oven to 350º. Bring large pot of water to boil
- 1 tablespoon plus 1 teaspoon kosher salt
- 1 16-ounce package elbow macaroni
- 2 pounds ground beef
- 1 large onion, chopped
- 2 8-ounce cans tomato sauce
- 1/8 teaspoon freshly ground black pepper
- 1 cup (8 ounces) ricotta cheese
- 1/4 cup (2 ounces) sour cream
- 1/3 cup chopped green bell pepper
- 1/3 cup chopped scallions
- 1/2 cup (2 ounces) shredded Cheddar
- 2 cups (4 ounces) shredded mozzarella
- 1/4 cup chopped fresh parsley

- 2 cups graham cracker crumbs
- 2 packages (8 ounces each) cream cheese, softened

Shoyu Chicken IP

Rinse chicken thighs, pat down to dry
- 4-5 lbs. thighs
- 2 cup shoyu
- 2 cup brown sugar
- 1 cup water
- 1 onion chopped
- 3-6 cloves garlic minced
- 2 tbsp grated ginger
- 1 tbsp black pepper, oregano
- 1 tsp paprika, crushed red pepper, cayenne pepper
Caprese Chicken Meatball Skewers with Spinach Almond Pesto

Preheat oven to 375º F and line a large baking sheet with foil
- For the Chicken Meatballs:
- 1 tablespoon extra-virgin olive oil
- 1/2 cup finely diced onion
- 1 large clove garlic, grated
- 1 pound ground chicken
- 1 heaping tablespoon tomato paste
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon dried oregano
- 1 tablespoon finely chopped fresh parsley
- For the Spinach Almond Pesto:
- 1 ounce hard cheese, like Parmigiano Reggiano or Grana Padano
- 1 ounce raw (unsalted, unroasted) almonds
- 2 ounces fresh spinach
- 1/4 teaspoon sea salt
- 1/8 teaspoon coarse black pepper
- a pinch of red chili pepper
- 1/2 cup extra virgin olive oil
- For the Assembly:
- 7 red cherry tomatoes, halved
- 6 yellow cherry tomatoes, halved
- 26 fresh basil leaves
- 1 tub of Galbani® Mozzarella Fresca™ Ciliegine (about 26 pieces)
Cheddar Bacon Chicken Tenders (8 WW Plus Points)

1 Heat oven to 400°F. Spray large cookie sheet with cooking spray
- 1 egg
- 1/2 cup plain panko crispy bread crumbs
- 1/2 cup finely shredded Cheddar cheese (2 oz)
- 1 package or jar (3 oz) cooked real bacon bits or pieces
- 1 package (14 oz) uncooked chicken tenders (not breaded)
- Chive and onion sour cream potato topper, if desired
