Amaretto Chocolate Chip Cookie Sandwiches

Line heavy large baking sheets with parchment paper and set aside
- 1/2 cup old-fashioned oats
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt

Puerto Rican Shredded Pork

Using a sharp knife, poke a few holes into the pork and stuff holes with half of the crushed garlic
- 2-3 pounds boneless sirloin pork roast, or sirloin tip roast, trimmed and tied with kitchen twine if necessary*
- 1 tablespoon vegetable oil
- 4-5 cloves garlic, skins removed, crushed
- 1 tablespoon cumin
- 1/2 tablespoon coarse salt
- 1 teaspoon oregano
- 4 oranges, juiced or 1 cup freshly squeezed orange juice
- 4 limes, juiced

With electric mixer, thoroughly cream together sugar, Crisco, eggs, milk, and vanilla
- 1 and 1/4 cups sugar
- 2/3 cup Crisco (I prefer butter-flavor Crisco)
- 2 eggs
- 1 T. milk
- 1 t. vanilla, preferably not imitation
- 3 cups sifted flour (don't bother sifting, just spoon lightly into a cup & level)
- 2 tsp. baking powder
- 1 tsp. salt
Deviled Ham and Asparagus Croque Madame with Deviled Eggs

Bring 1 inch of water to a boil
- 1 bundle thin asparagus, trimmed of tough stems
- Salt
- 1/2 pound mild ham, such as French ham or other imported mild ham or boiled ham, chopped

- 1 small fresh chili, seeded and chopped

- 2 About 2 tablespoons parsley leaves

- 3 tablespoons butter
- 2 round tablespoons flour
- 1 1/2 cups milk
- Salt and pepper
- Freshly grated nutmeg
- 2 cups shredded cheddar or Gruyère cheese, divided
- 1/2 cup freshly grated Parmigiano-Reggiano cheese, divided
- 4 slices good quality white bread or white peasant style bread, such as Amy’s Bread

- 1 cup water
- 1/3 cup Vegetable Oil
- 3 large eggs
- 1/2 cup mini semi-sweet chocolate chips
- 1 (15.6 oz.) can Pillsbury® Funfetti® Holiday Vanilla Flavored Frosting
- 1 pint strawberry ice cream or flavor of your choice, softened
- 1 (8 oz.) container frozen whipped topping, thawed
- 24 maraschino cherries with stems, drained

- 1 package (3 oz.) cream cheese, softened
- 3/4 cup sugar
- 1 egg yolk
- 2 teaspoons orange juice
- 1 teaspoon almond extract
- 1 1/4 cups all purpose flour
- 12 teaspoons baking powder
- 1/4 teaspoon salt
- 3 3/4 cups sweetened coconut flakes
Quick Chicken and Dumplings
