Pork Chops Provencale *(GOOD)*

Preheat oven to 375 degrees
- 4 pork chops
- 1 (28 ounce) can tomatoes, with liquid
- 1 cup whole mushrooms
- 1 large onion, cut in eights
- 2 green peppers, chopped
- 1 clove garlic, minced
- 1/2 teaspoon rosemary
- 1/2 teaspoon oregano
- Salt and pepper to taste
Sesame Ginger Grilled Vegetables and Soba Noodles

1 Heat gas or charcoal grill
- 6 oz uncooked soba (buckwheat) noodles or whole grain vermicelli
- 1 medium red bell pepper, quartered
- 1 medium yellow summer squash, cut in half lengthwise
- 1 medium zucchini, cut in half lengthwise
- 1 teaspoon vegetable oil
- 1 box (9 oz) frozen sugar snap peas
- 1/4 cup sesame ginger marinade with mandarin orange juice
- 1 teaspoon sesame seed, if desired
Kielbasa Chili

In Dutch oven coated with cooking spray, saute kielbasa until browned
- 1 pound smoked kielbasa or Polish sausage, halved and sliced
- 2 cans (14-1/2 ounces each) diced tomatoes, undrained
- 1 can (15 ounces) chili with beans
- 1 can (8-3/4 ounces) whole kernel corn, drained
- 1 can (2-1/4 ounces) sliced ripe olives, drained
Sautéed Spinach with Crispy Garlic

Heat oil in a large nonstick skillet over medium heat
- 1 Tbsp olive oil, extra virgin
- 4 clove(s) (medium) garlic clove(s), thinly sliced
- 32 oz fresh spinach, baby leaves
- 1/2 tsp table salt
- 1/4 tsp crushed red pepper flakes
Lemon Pie Parfaits

In bottom of glasses or dishes, sprinkle a few of the crushed cookies
- 1 (21 oz.) can lemon pie filling
- 1 1/2 c. lemon wafer cookies, crushed
- 1 (8 oz. tub) Cool Whip
- 1/4 c. sugar

Colorful Coleslaw

Combine the shredded green cabbage, purple cabbage, sweet peppers and carrots in a bowl
- 1/2 head green cabbage, sliced thin
- 1/2 head purple cabbage, sliced thin
- 3 mini sweet peppers (in two different colors), thinly sliced
- 2 whole carrots shredded
- 1/2 cup mayonnaise
- 1/2 cup whole milk
- 1 tablespoon sugar
- 1 teaspoon white vinegar
- 1/4 teaspoon salt
- Couple dashes hot sauce
- 2 cups fresh cilantro leaves
SUGAR-FREE ESCALLOPED APPLES

In medium bowl combine diced apples with gelatin powder, Bisquik & apple pie spice, coating apple pieces thoroughly
- 3 large green cooking apples
- 2 envelopes sugar-free Lemon gelatin powder
- 1/4 cup Bisquik
- 1 1/2 tsp apple pie spice
- 1/4 cup melted butter (4 TB)
Greek Chicken Souvlaki

Trim chicken and cut into large chunks- mine were about 1
- Marinade :
- 4-6 boneless, skinless chicken breasts
- vegetables like mushrooms, onion and zucchini, if desired
- 1/4 cup olive oil
- 1/4 cup fresh squeezed lemon juice {about 3 lemons}
- 1 1/2 tsp red wine vinegar
- 2 tsp finely minced garlic
- 1 1/2 tsp dried oregano
- 1/2 tsp dried thyme
Block Party Ice Cream Cake

Remove block of ice cream from package and place on serving platter, then spread whipped topping evenly around side...
- 1 (1/2 gallon) block vanilla fudge swirl ice cream
- 1 (8 ounce) container frozen whipped topping, thawed
- 1 (12 ounce) jar hot fudge sauce
- 1 (3 ounce) package ladyfingers, split in half
Grilled Balsamic Pork Chops

Place pork chops in medium-sized shallow dish and sprinkle with oil, vinegar, and rosemary
- 4 (1-inch) bone-in or boneless pork chops (see Notes)
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon minced fresh rosemary
- Salt to taste
- Freshly ground black pepper to taste
