Daddy Wu’s Moo Shu Pork

To a plastic bag, add soy sauce, oyster sauce, sake, sesame oil, ginger, garlic and pork
- For the Marinade:
- 1/2 pound pork tenderloin, julienned
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 4 tablespoon sake or xiao shing wine, can replace sake for dry sherry
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 teaspoon grated garlic
- ..
- 6 tablespoons canola oil
- 3 eggs, lightly beaten
- 1 cup fresh shitake mushrooms, julienned
- 2 cups shredded cabbage
- 1 cup carrots, julienned
- 1 cup snow peas, trimmed, julienned
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 teaspoon grated garlic
- 3 teaspoons sake
- 2 tablespoons oyster sauce
- Salt and pepper, to taste
- ...
- Lettuce, or flour tortillas

- For the Garnish:
- Hoisin sauce
- 1 bunch scallions, sliced on the bias or made into scallion brushes. Make scallion brushes by holding the white part of the scallion on one side and making several vertical slices through them. Keep them in ice cold water to make them bloom.

- 6 1/2 pounds pork butt or boneless chicken thighs
- 5 cups achoite oil
- 2 1/2 cups onion, chopped
- 10 cloves garlic, minced
- 15 green onions, finely chopped
- 2 1/2 cups Chinese parsley, chopped
- 5 (7-ounce) jars diced pimientos
- 5 teaspoons dried oregano leaves
- 8 (8-ounce) cans tomato sauce
- 12 1/2 teaspoons salt
- 20 Hawaiian chili peppers, seeded or 3 3/4 teaspoon dried crushed red pepper flakes or 1 1/2 teaspoons ground red pepper
- 100 medium-sized Chinese green bananas
