Just Like Mom's Meatloaf

Combine all ingredients except topping and place in loaf pan
- Topping:
- 2 eggs beaten
- 8 ounce can tomato sauce
- 3/4 cup cracker crumbs
- 1/4 cup onion, chopped
- 11/4 cup green pepper, finely chopped
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 pound lean ground beef
- 1/2 cup catsup
- 2 teaspoons mustard
- 2 tablespoons brown sugar
Lucky Lime Salad

In small bowl, dissolve gelatin in boiling water; stir in cold water
- SHAMROCKS:
- 1 package (3 ounces) lime gelatin
- 1 cup boiling water
- 1/2 cup cold water
- 1 package (3 ounces) cream cheese, softened
- 1/4 teaspoon lemon juice
- 2 cups whipped topping
- 1 can (8 ounces) crushed pineapple, drained
- 1 package (6 ounces) lime gelatin
- 2-1/2 cups boiling water
Hawaiian Paradise Cake

Chiffon cake: I made this cake twice
- Chiffon Cake:
- 2 1/4 cups of flour
- 2/3 cups of white sugar
- 1 tbs baking powder
- 1 tsp salt
- 1/2 cup vegetable oil
- 1/2 cup water
- 2 oz key lime juice
- 2 oz guava nectar
- 2 oz passion fruit nectar
- 5 egg yolks
- 2 tsp vanilla extract
- 2 tsp grated lemon zest
- liquid food coloring : yellow, red and green
- 8 egg whites
- 1/2 tsp cream of tartar
- 1/2 cup white sugar
- guava chiffon topping
- 2 tablespoons cornstarch
- 1/2 cup water
- 1 pinch salt
- 12 ounces guava juice
- 1 teaspoon lemon juice
- 1 slightly beaten egg yolk
- 1 tablespoon butter
- Whipped Cream Icing:
- 1 eight oz package reduced fat cream cheese (room temperature)
- 1/2 cup of white sugar
- 1 tsp vanilla extract
- 1/8 tsp almond extract
- 1 quart of heavy or regular whipping cream
Autumn Pasta Salad

In a medium pot of boiling salted water, cook pasta to desired doneness; drain well and cool
- 1 (8-ounce) package elbow macaroni or other small pasta shape
- 1 cup chopped cooked rotisserie chicken
- 1 cup chopped apples
- 1 cup chopped pears
- 1/2 cup dried cranberries
- 1/2 cup chopped celery
- 1/2 cup chopped candied walnuts
- 1 cup mayonnaise
- 3 tablespoon maple syrup
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
Salsa Verde Chicken Casserole

Quick and easy salsa verde chicken casserole is a perfect weeknight meal
- 2 cups shredded rotisserie chicken
- 1 cup sour cream, 8 ounces
- 1 1/2 cups salsa verde, divided
- 8 (6 inch) corn tortillas
- 2 cups tomatoes, chopped
- 1/4 cup fresh cilantro, minced
- 2 cups shredded Monterey Jack cheese, 8 ounces
- Optional toppings: avocado slices, thinly sliced green onions or fresh cilantro leaves
CHOCOLATE PECAN PIE KRISPIE BARS

Preheat oven to 325 degrees
- 1/3 cup Unsalted Butter, plus additional for pan and hands
- 6 cups Miniature Marshmallows
- 2/3 cup Caramel Sauce or Caramel Ice Cream Topping
- 2 Tbsp Dark Corn Syrup
- 1/2 tsp Vanilla Extract
- 5 cups Kellogg’s Rice Krispies
- 2 cups Kellogg’s Cocoa Krispies
- 2 cups Toasted Pecan Pieces
- 2 cups (12 Ounces) Semi-sweet Chocolate Chips
Taco Salad #2

In a large skillet, cook pork over medium heat until no longer pink; drain
- 1 pound ground pork or beef
- 1 envelope taco seasoning
- 1 can (16 ounces) kidney beans, rinsed and drained
- 3/4 cup water
- 10 cups torn romaine
- 2 medium tomatoes, chopped
- 1/3 cup chopped onion
- 2 cups (8 ounces) shredded cheddar cheese
- 1/2 to 3/4 cup Western salad dressing
- Tortilla chips, crushed
- Sour cream and guacamole, optional
BEEF STEW

• Remove any excess fat from meat and cut into bite-sized pieces
- 1 pound stewing beef
- salt and pepper
- 1 tablespoon vegetable oil
- 2 tablespoons all-purpose flour
- 3 to 4 fingerling potatoes, diced
- 1 large carrot, peeled and thinly sliced
- 1 rib celery, diced
- 1/2 large onion, diced
- 1 clove garlic, minced
- 3 sprigs fresh thyme
- 1 bay leaf
- 1 ounce of pearl barley
- 1 cup of stoudt (or other rich beer)
- 1 cup of beef stock
- 1 cup frozen peas
Spanish Stew

Brown the round steak and pork pieces in the olive oil in a large saucepan or Dutch oven
- 1-2 Tbsp olive oil ($.10)
- 1 lb. round steak, cut into bite size chunks ($2.99)
- 1 lb. pork tenderloin or pork chops, cut into bite size chunks ($1.99)
- 1 15 oz. can diced tomatoes, I used fire-roasted ($.16)
- 1 can peas ($.49)
- 1 can french style green beans ($.49)
- 1 6 oz. can mushrooms ($.39) From Walgreens sale
- 1 bag frozen lima beans ($.88)
- As needed, water or beef broth
- Salt and pepper to taste
- 1 1/2 cups brown rice ($.60)
- Paprika and parsley for garnish ($.05)
Peach Cobbler

- Mix together:
- 8 fresh peaches – peeled, pitted and sliced into thin wedges
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 teaspoon fresh lemon juice
- 2 teaspoons cornstarch
- 1 cup all-purpose flour
