Pumpkin Parfaits

- 1 1/2 cups whipping cream

- Crumble Topping:
- 3/4 cup each sweetened dried cranberries (we used Craisins) and dried apricots, diced
- 1/3 cup apricot brandy or nectar
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp ground ginger
- 1/2 tsp salt
- 1 stick (1/2 cup) unsalted butter, softened
- 1 1/3 cups granulated sugar
- 1 Tbsp vanilla extract
- 2 large eggs
- 1 cup heavy cream, half and half or whole milk
- 1/3 cup slivered almonds
- 1/3 cup packed light brown sugar
- 3 Tbsp each all-purpose flour and cold unsalted butter, cut into bits
- Confectioners' sugar, for dusting
EGGNOG COOKIES #3

For dough, in large bowl, cream butter and sugar until light and fluffy
- DOUGH:
- 1 c. unsalted butter, at room temperature
- 2 c. granulated sugar (I used about 1 3/4 c.)
- 1 c. commercial eggnog
- 5 1/2 c. all-purpose flour, plus additional for work surface
- 1 tsp. baking soda
- 1/2 tsp. ground nutmeg
- TOPPING:
- 1 large egg white, lightly beaten
- Colored sugar or sprinkles
Easy Homemade Coconut Pie

Preheat oven to 350°F. Mix all ingredients together and pour into two unbaked pie shells
- 12-oz. can of evaporated milk, minus 4 Tbsp.
- 1 stick of butter or margarine, melted
- 4 eggs
- 2 cups sugar
- 7-oz. bag of shredded coconut
- 1 tsp. vanilla
- 2 unbaked 9-inch pie shells
Asian Pepper Steak #2

In a small bowl, combine broth, soy sauce, cornstarch, and ginger; mix well and set aside
- 1/2 cup ready-to-use beef broth
- 3 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon ground ginger
- 2 tablespoons vegetable oil
- 1 to 1-1/2 pounds beef top or bottom round steak, cut into 1/4-inch strips
- 1 medium-sized red bell pepper, cut into 1/4-inch strips (see Options)
- 1/4 pound fresh mushrooms, sliced
- 3 scallions (green onions), sliced
- 1 garlic clove, minced
HOMEMADE ENCHILADA SAUCE

Place the oil in a skillet and saute the garlic for 1 minute

- 3 garlic cloves, minced
- 2 TBS homemade chili powder
- 1 TBS homemade onion powder
- 1 tsp parsley
- 1/2 tsp oregano

- 3/4 cup tomato paste
- 1-1/2 cups chicken broth
- 1/4 cup homemade salsa, blended until smooth

- 2 pounds boneless, skinless chicken breasts, cut into 2-inch chunks
- 2 tablespoons cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon ground red pepper
- 1/2 teaspoon salt
- 1/4 cup canola oil
- 1 cup jalapeno pepper jelly
- 1 tablespoon light soy sauce
- 2 tablespoons bourbon
Bunny Cookies

Step 1 Sift together flour, baking soda, ginger, cinnamon, cloves and salt onto waxed paper
- 3 cups all purpose flour
- 2 teaspoons baking soda
- 1-1/2 teaspoons ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup solid vegetable shortening
- 1/2 cup sugar
- 1 egg
- 1/2 cup molasses
- 1-1/2 teaspoons cider vinegar
Dulce de Leche Brownie

Preheat the oven to 350 degrees
- 8 tablespoons salted or unsalted butter, cut into pieces
- 6 ounces bittersweet or semisweet chocolate, finely chopped
- 1/4 cup unsweetened Dutch-process cocoa powder
- 3 large eggs
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 cup flour
- optional: 1 cup toasted pecans or walnuts, coarsely chopped
- 1 cup Dulce de Leche (or Cajeta)
Cherry Cola Country Pork Ribs

In soup pot, heat oil over medium-high heat and brown ribs on all sides 8 to 10 minutes
- 2 tablespoons vegetable oil
- 5 pounds country-style pork ribs
- 1 (12 ounce) can carbonated cherry cola or cola beverage
- 1 (12 ounce) bottle chili sauce
- 2 tablespoons Worcestershire sauce
- 2 tablespoons hot pepper sauce
- 1 (10 ounce) jar Maraschino cherries in their own juice
