Golden Shepherd’s Pie

In a lightly greased 10" deep-dish pie plate or 4 oven-safe bowls, layer stuffing, vegetables, turkey and gravy
- 2 to 3 c. prepared stuffing
- 1 c. assorted cooked vegetables, diced
- 2-1/2 c. cooked turkey, cubed or sliced
- 1 to 2 c. turkey gravy
- 2 c. mashed potatoes
- 1/4 c. butter, diced
- Garnish: shredded Cheddar cheese, paprika, fresh parsley
Kielbasa, Cabbage and Onions

1 Heat oil in KitchenAid® Multi-Cooker on Sauté setting
- 2 tablespoons olive oil
- 3/4 to 1 pound kielbasa, cut in half lengthwise then cut diagonally into 3/4-inch slices
- 1 onion, thinly sliced
- 2 teaspoons fennel seeds
- 1 teaspoon caraway seeds
- 1 clove garlic, minced
- 1/2 cup water
- 1 pound cabbage, thinly sliced (about 6 cups)
- 1 1/2 pounds red potatoes (4 medium), cut into 3/4-inch pieces
- 1 bottle (12 ounces) lager or other light-colored beer
- 1 tablespoon coarse ground mustard
- 1 1/2 teaspoons salt
- 1 ⁄2 teaspoon freshly ground black pepper
Orzo with Chicken and Fresh Herbs

Cook and drain pasta as directed on package
- 1/2 cup uncooked orzo or rosamarina pasta (about 3.5 oz)
- 1 pint (2 cups) cherry or grape tomatoes, cut in half
- 2 cloves garlic, finely chopped
- 1/4 cup olive oil
- 3 tablespoons white wine vinegar
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 3 tablespoons chopped fresh basil, oregano, marjoram or thyme leaves (or a combination)
- 2 cups cut-up cooked chicken
- 1 cup small fresh mozzarella cheese balls (about 6 oz)
- 4 large leaves butter lettuce
Southwest Chicken Skillet

In 10-inch skillet, heat oil over medium-high heat
- 1 tablespoon vegetable oil
- 1 1/4 pounds boneless skinless chicken breasts, cut into 1-inch pieces
- 1 bag (1 pound) frozen broccoli, red peppers, onions and mushrooms
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup Thick 'n Chunky salsa
- 1 flour tortilla for burritos (8 inch)(from 11.5-ounce package), cut into 2x1-inch strips
- 1 cup shredded Cheddar cheese (4 ounces)
Millionaire's Cake

Preheat oven to 350 degrees F
- 1 (18.25-ounce) package yellow cake mix, prepared according to package directions
- 1 (8-ounce) can mandarin oranges, drained, with 6 pieces reserved for garnish
- 1 (8-ounce) package cream cheese, softened
- 1 cup confectioners' sugar
- 1 (4-serving-size) package instant vanilla pudding and pie filling
- 1 (20-ounce) can crushed pineapple, drained
- 1 (8-ounce) container frozen whipped topping, thawed
- 1/4 cup chopped walnuts
Apple Poppy Seed Slaw

MAKES 8 SERVINGS 1. For the dressing, whisk together all the dressing ingredients in a small bowl
- DRESSING
- 6 tablespoons light mayonnaise
- 1/3 cup plain nonfat Greek yogurt
- 2 tablespoons sugar (or 2 tablespoons sugar substitute or 3 packets)*
- 1 tablespoon white wine vinegar
- 1 teaspoon poppy seeds
- 1/4 teaspoon salt
- SALAD
- 2 cups chopped green apples (about 2 medium apples)
- Juice of 1 lemon (about 3 tablespoons)
- 5 cups shredded green cabbage
- 1 cup thinly sliced celery
- 2 medium green onions, white and green parts, thinly sliced
Cranberry Candied Yams

In saucepan, cook potatoes in boiling water until just tender
- 4 yams or sweet potatoes
- 1/2 cup whole-berry cranberry sauce
- 3 tablespoons lemon juice
- 1/3 cup honey
- 1 tablespoon melted butter
Lighter Chicken Enchiladas

In a large skillet with a tight-fitting lid, bring 1 inch salted water to a boil
- Coarse salt and ground pepper
- 3 boneless, skinless chicken breast halves (6 to 8 ounces each)
- 2 tablespoons vegetable oil, such as safflower
- 2 garlic cloves, minced
- 1/4 cup all-purpose flour
- 1 teaspoon ground cumin
- 1 to 2 tablespoons minced canned chipotles in adobo
- 1 can (14 1/2 ounces) reduced-sodium chicken broth
- 8 corn tortillas (6-inch)
- 1/2 cup grated Monterey Jack cheese (2 ounces)
Slow Cooker Carne Asada

Cut skirt steak in half or in thirds so it can fit into slow cooker
- 2 pounds skirt steak
- 1 lime, juiced
- 2 teaspoons cumin
- 1 teaspoon paprika
