Anita's Chili

Brown meat, add all ingredients to slow cooker
- 1 lb Ground Beef1
- 1 Onion medium, chopped
- 1 Green Pepper, medium, chopped
- 1 Clove Garlic, chopped or Powder
- 1 can Rotel diced Tomatoes with Chili
- 6 oz can tomato Paste
- 2 tsp Chili Powder
- 15 oz can Baked Beans, Texas style
- 15 oz can Kidney Beans
Fried Clams

Combine evaporated and whole milk, egg, vanilla, salt and pepper
- 4 cups evaporated milk
- 3/4 cup whole milk
- 1 egg
- 1/2 tsp vanilla extract
- Dash of salt and pepper
- 4 dozen freshly shucked clams
- 1/2 cup cake flour
- 1 1/2 cups yellow cornmeal
- Oil for frying
Stuffed Mushrooms

Wash and drain mushrooms. Remove stems
- 24 large fresh mushrooms, 1 1/2 to 2 inches in diameter
- 1/4 cup green onions
- 1 clove of garlic, minced
- 1/4 cup margarine or butter
- 2/3 cup fine dried bread crumbs
- 1/2 cup shredded cheddar or crumbles blue cheese (2 oz)
Apples and Banana Bread

1. Preheat oven to 350 degrees
- 1 1/2 Cups mashed ripe bananas (2 to 3 medium)
- 1 1/2 Cups chopped pealed apples (2 medium)
- 1/2 Cup sugar
- 1/2 Cup packed brown sugar
- 2 Tbs water
- 2 Tbs butter, melted
- 1 1/2 Cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1 Cup sweetened shredded coconut
- 1/2 Cup caramel sundae syrup
- 1/4 tsp sea salt

- 1 cup flour
- 1 1/2 cups of milk
- 3 eggs
- 2 Tbs sugar
- 1 Tbs cooking oil
- 1/8 tsp salt
Apple Crisp

Put sliced apples in large pie pan until full
- 3 or 4 Apples Sliced
- Topping
- 2 eggs
- 1 Cup sugar
- 2 Tbs butter melted
- 1 cup sifted flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla
Pork Lo Mein Recipe

Cut tenderloin in half lengthwise
- 1 pork tenderloin (1 pound)
- 1/4 cup reduced-sodium soy sauce
- 3 garlic cloves, minced
- 1 teaspoon minced fresh gingerroot
- 1/4 teaspoon crushed red pepper flakes
- 2 cups fresh snow peas
- 1 medium sweet red pepper, julienned
- 3 cups cooked thin spaghetti
- 1/3 cup reduced-sodium chicken broth
- 2 teaspoons sesame oil
Cod Au Gratin Maritime

Thaw frozen fish. Arrange fish fillets in shallow 2 quart casserole
- 2 lbs cod or other firm fish fillets, fresh or frozen
- 2 tsp salt
- 1/4 cup butter or margarine
- 1/2 cup chopped onion
- 1/4 cup flour
- 2 cups milk
- 1 whole clove
- 1/2 cup shredded cheddar cheese
- chopped parsley optional
Codfish Cakes

Peel potatoes and boil until tender not mushy
- 1 pound Maine potatoes
- 1 lb shredded salt cod
- 3 large eggs, at rom temperature
- 1/2 cup chopped parsley
- 1 small onion, minced
- black pepper to taste
- vegetal oil and olive oil for frying
- Salt
Salad Dressing

- 1 Cup Salad Oil
- 1/3 Cup Wine Vinegar
- 1 tsp sugar
- 1/4 tsp dry mustard
- 2 Tbs finely chopped onion
- 1 1/2 tsp salt
- Dash of pepper
