Memphis-Style Barbecue Rub

Combine all ingredients. Rub into meat at lest 2 hours before cooking
- 1 Cup seasoned Salt
- 1 tbs freshly Ground Black Pepper
- 1 tsp Brown Sugar
- 1 tsp onion salt
- 1 tsp garlic salt
- 1/4 tsp sweet paprika
- 1/4 tsp crushed red pepper
- 1/4 tsp salt
- 1/4 tsp dried thyme
- 1/4 tsp rubbed sage
Quick Grilled Fish Tacos

Heat gas or charcoal grill
- 1 lb white fish fillets, such as Tilapia or Catfish
- 2 Tbs Old El Paso taco seasoning mix
- 3 Tbs Wish Bone Ranch Dressing
- 4 Cups coleslaw mix (shredded cabbage and carrots)
- 1 small jalapeño chile, seeded finely chopped
- 10 corn tortillas (6 inch)
- 1 1/2 cups sliced radishes (about 10)
- Pace Salsa for topping
- Red Pepper Sauce to taste, if desired
Italian Oven Fried Chicken

Put equal amounts of oil and melted butter in shallow baking pan
- 3 1/2 lbs chicken, cut up
- 2 eggs plus 4 Tbs milk
- 2 Tbs butter
- 1 1/2 cups parmesan cheese
- 1 tsp each of garlic powder, salt, paprika
- 1/4 tsp pepper
Crispy Crab Nuggets

Put breadcrumbs in food processor so they are chopped up fine(to save time)
- 1 pound fresh crab meat
- 3 slices of white bread, crust removed or packaged bread crumbs
- 1 egg beaten
- 1 tablespoon mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 tablespoon Old Bay Seasoning
- 1 tablespoon parsley
Yankee Doodle Salad

This is an economical salad for a crowd
- 6 cups macaroni, uncooked
- 1 cup minced onion
- 6 cups sliced celery
- 3/4 cup chopped pimento
- 1 1/2 Tbs salt
- 1 1/2 cups chopped pickle
- 2 cups mayonnaise
- 3/4 cup sour cream
- 1 Tbs chopped fresh dill
Coconut Macaroons

1. Preheat oven to 350 degrees
- 1 Cup sweetened shredded coconut
- 3 1/2 Cups almond paste
- 1 Cup all-purpose flour
- 2/3 Cup sugar
- 5 large eggs
- 1/2 Cup chopped walnuts

Pork Chops

I copied this from The Orlando Sentinel months ago and just now found it
- 2 -4 pork chops, 1/2 inch to 3/4 inch thick
- 1/4 cup chicken broth
- 1/8 cup honey
- 1/8 cup soy sauce
- 1 tablespoon ketchup
- 1/4 teaspoon ginger
- 1/8 teaspoon garlic salt
Pot Roast With Vegetables

DIRECTIONS: In a pressure cooker, brown roast in oil on all sides
- 3 Pounds beef sirloin tip roast
- 2 Tbs vegetable oil
- 4 Large potatoes peeled nd quartered
- 4 Large carrots, cut into 2" pieces
- 1 Large onion, cut into wedgs
- 2 Cups water
- 1 tsp beef bouillon granules
- 1/2 tsp salt
- 1 / 4 tsp black pepper
- 3 tbs cornstarch
- 3 tbs cold water
Rice Pilaf

1.In a medium sauce pan sauté the onion, mushrooms, celery and garlic in olive oil on high
- 1/2 cup finely chopped onion
- 1/2 cup sliced fresh mushrooms
- 1/4 cup of finely diced celery
- 1 tablespoon of garlic
- 1 tablespoon olive oil
- 3/4 cup un-cooked long grain rice
- 1 1/2 teaspoons of instant chicken or vegetable bouillon
- 1/4 teaspoon black pepper

- 1 can evaporated milk
- 1 can of warm water
- 1/2 cup sugar
- 1 Tbs salt
- 2 eggs
- 2 packages yeast
- 8 cups of flour.
