1. In a large skillet or wok, heat oil over medium-high heat
- 1 Tbs olive oil
- 1 lb boneless skinless turkey breast halves, cut into strips
- 1 lb. fresh asparagus, cut into 1-inch pieces
- 4 oz. fresh mushrooms
- 2 medium carrots, quartered lengthwise and cut into 1-inch pieces
- 4 green onions, cut unto 1-inch pieces
- 2 garlic cloves, minced
- 1/2 tsp ground ginger
- 2/3 cup water
- 2 Tbs reduced-sodium soy sauce
- 4 tsp cornstarch
- 1 can (8 oz) sliced water chestnuts, drained
- 3 3/3 cups hot cooked white or brown rice
- 1 medium tomato, cut into wedges

- 1/4 tsp onion powder
- 2 tbs margarine or butter
- Light cream or milk
- 2 tsp all-ourpose flour
- 1 Tbs Dijon style mustard
