Italian Cocktail Meatballs

For the meatballs, in a medium bowl beat egg with a fork
- 1 Egg
- 1/4 Cup fine dry bread crumbs
- 1/4 Cup finely shredded Parmesan cheese
- 2 Tbs milk
- 1 Tbs chopped fresh basil
- 1 Tbs chopped fresh flat-leaf parsley
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lb. ground beef
- Finely shredded Parmesan (optional)
- Sauce
- 1 Tbs olive oil
- 3/4 Cup chopped onion
- 1/4 tsp salt
- 1/4 tsp crushed red pepper
- 2 cloves garlic, minced
- 1 28 oz. can crushed tomatoes
- 1 8 oz. can tomato sauce
- 2 Tbs chopped fresh basil
Hardee's Biscuits

Combine flour, sugar, milk and mayo into a smooth dough
- 2 Cups Self-rising flour
- 1 Tbs Sugar
- 1 Cup milk
- 1/3 Cup Mayonnaise
Chicken And Bean Chili

1. In a dutch oven, heat oil and butter over medium high heat
- 1 Tbs olive oil
- 1 Tbs butter
- 1 medium onion, chopped
- 2 large garlic cloves, minced
- 2 cans (16 oz. each) kidney beans, rinsed and drained
- 2 cans (15 oz. each) pinto beans, rinsed and drained
- 1 can (28 oz.) diced tomatoes, undrained
- 3 Cups shredded cooked chicken
- 1 2/3 Cup whole milk
- 1 Cup beer or reduced sodium chicken broth
- 2 Tbs chicken boullion granules
- 1 Tbs sugar
- 1 bay leaf
- 2 tsp ground cumin
- 1 tsp each of onion powder, garlic powder and chili powder
- 1/2 tsp salt
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp ground celery seed
- 1/4 tsp pepper
- 1/8 tsp ground turmeric
Potato Pancakes

Chop potatoes finely in a food processor fitted with a steel blade, but don't let them get mushy
- 5 large potatoes peeled and cut into chunks
- 1 medium onion
- 2 large eggs well beaten
- 1-1/2 tsp salt
- 1-1/2 tsp baking powder
- 3 tbs all purpose flour
- vegetable oil
Turkey Pot Pie

DIRECTIONS Preheat oven to 375°
- 2 medium potatoes, peeled and cut into 1-inch pieces
- 3 medium carrots, cut into 1-inch slices
- 1 medium onion, chopped
- 1 celery rib, diced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 6 tablespoons all-purpose flour
- 3 cups chicken broth
- 4 cups cubed cooked turkey
- 2/3 cup frozen peas
- 1/2 cup plus 1 tablespoon heavy whipping cream, divided
- 1 tablespoon minced fresh parsley
- 1 teaspoon garlic salt
- 1/4 teaspoon pepper
- 1 package (15 ounces) refrigerated pie pastry

Cuban Black Beans and Rice

Cook the rice according to the package directions
- 1 cup long-grain white rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 bell pepper, cut into 1/4-inch pieces
- 2 cloves garlic, chopped
- kosher salt and black pepper
- 1 teaspoon ground cumin or Oregano
- 2 15.5-ounce cans black beans, rinsed
- 1 teaspoon dried oregano
- 1 tablespoon vinegar

Heat the oil to 300 F in a fryer
- Chips; 3 large baking potatoes,washed and dried. countertop fryer 300 F
- Tempura-Battered Fish
- 1 medium egg
- 1 cup cold sparkling water,club soda or tap water flvoured with lemon or lime
- 1/2 cup plain flour
- 12 portions haddock filet(5 oz/100g each),patted dry
- sea salt,to tasre
- 1 lemon,sliced
Pulled Pork Tacos

Assembly: 1. Make the Cole Slaw set it aside 2
- Ingredients Cole Slaw:
- 2 cup Shredded red cabbage
- 1 cup Shredded carrots
- 1 cup Mayo
- 1/4 cup White vinegar
- 1.5 tbsp Sriracha
- 1 tbsp ginger
- 1 tsp white pepper
- Season to Taste with Mixed peppercorn blend
- Mix mayo, vinegar, sriracha, ginger and pepper in small mixing bowl, reserve.
- Candysauce:
- (1) 8.5 oz can Peaches in heavy syrup, drained.
- 1/4 cup BBQ sauce
- 1.5 tsp Ginger
- 2 tsp brown sugar
- Mix well in food processor, refrigerate overnight
- Pork Butt:
- one whole bone in or boneless pork shoulder, Rubbed generously 2 Cups Montreal Steak Seasoning and place into smoker for 4-5 hours or until desired bark is obtained. Cool in refrigerator overnight.
- Or use a pre made store bought smoked pulled pork shoulder without sauce or you can always use your own pork recipe.
- Small sweet potato: (6 oz)
- julienne cut, skin on. Fry at 300 for 8 minutes. Increase heat to 375 and cook until crunchy ( 30 seconds), drain with paper towel and salt to taste, reserve.
- Taco Shells:
- (8) 6" Corn/Flour Shells

- 3/4 cup of honey
- 1/2 cup butter or margarine
- 2 very ripe bananas, mashed
- 2 eggs
- 1 1/2 cups whole wheat flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp nutmeg
- 1/4 cup milk
- 1/2 tsp vanilla

- 3 large garlic cloves, put through a garlic press
- 1/4 tsp kosher salt
- 3 Tbs extra-virgin olive oil
- 2 Cups 1/2 inch cubes day old Cuban or French Bread
- For Dressing:
- 2 Tbs Mayonnaise
- 1-1/2 Tbs fresh Lemon Juice
- 1 tsp Worcestershire Sauce
- Freshly Ground Black Pepper
- 1 Small garlic clove, put through a garlic press
- 2 Tbs anchovy paste
- 2/3 cup extra-virgin olive oil
- 1/4 tsp kosher salt (optional)
- For Salad:
- 3 heads romaine lettuce hearts
- 1/2 cup Parmesan Cheese
