- Hand full Shredded Coconut

Perfect Paleo Stir-Fry

Heat 2 tbsp. coconut oil in a wok or large pan
- 2 tbsp. of coconut oil
- 2 cloves of garlic (thinly sliced)
- 1 inch ginger (finely grated)
- 2-3 green (spring) onions (sliced into long slivers)
- 1 carrot (coarsely grated)
- 1 green pepper (sliced into thin, long pieces)
- 1 chicken breast (cut against the grain into bite-sized pieces)
- 1 heaping tsp. arrowroot powder
- 1/4 cup water
- 2 tbsp. homemade bone broth
- 1 tbsp. organic, gluten-free soy sauce
- A few drops of toasted sesame oil

- 2 2 1/4 pounds zucchini, sliced lengthwise, 1/4 inch thick

- 1/2 1/2 1/2 tsp salt

- 3 3 3 cups marinara sauce, divided
- 16 16 16 ounces ricotta or cottage cheese

- 1/2 cup coconut cream (the creamy part on the top of a can of coconut milk)

Preheat oven to 350. Lightly spay a 9×13 baking dish with cooking spray

- 1 (8 oz) package of full fat cream cheese, room temperature
- 2 eggs
- 1/4 tsp ground black pepper
- 1 tsp garlic powder
- 1/4 cup grated parmesan cheese
- Topping
- 1/2 cup pizza sauce
- 1 1/2 cups shredded mozzarella cheese
- toppings - pepperoni, ham, sausage, mushrooms, peppers

- 1 1/2 lbs. ground beef
- 1/4 cup almond meal
- 1 egg, beaten
- 2 clove garlic, minced
- 1/2 tsp. dried thyme
- 1 tbsp. coconut aminos (optional)
- Cooking fat
- Sea salt and freshly ground black pepper
- BROWN ONION GRAVY
- 2 to 3 large red onions, thinly sliced
- 3 cups beef stock
- 1/2 cup dry red wine (optional)
- 1 tbsp. tomato paste
- 2 tbsp. tapioca starch
- 2 tbsp. ghee or butter
- Sea salt and freshly ground black pepper
