- 8 eggs
- 8 ounces cooked ham, crumbled
- 1 cup diced red bell pepper
- 1 cup diced onion
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 2 tablespoons water
Baked Apple Chips

1.Preheat oven to 225 degrees
- Apples
- A squeeze of fresh lemon juice
- A pinch of cinnamon
Coconut Flour Flatbread

- 1 large egg
- 1 Tbsp coconut flour
- 1 Tbsp parmesan cheese (optional)
- 2 pinches of sea salt or any herbs you want!*

Twice Baked Cauliflower

Preheat oven to 350F Cut out stem and core from cauliflower, and cut into small pieces
- 1 large head cauliflower
- 4 oz. cream cheese
- 1/2 cup sour cream
- 1/4 cup minced green onions
- 1/4 cup freshly grated Parmesan cheese
- 6 slices bacon, cooked until very crisp, fat blotted with paper towel and then crumbled

Grain-Free Apricot Pecan Cookies

Preheat the oven to 350ºF and adjust the rack to the middle position
- 2 cups almond flour
- 2 tablespoons coconut flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon unflavored gelatin
- 1/2 teaspoon Celtic sea salt

Paleo Chicken & Dumplings

Heat the butter in a large saucepan
- Dumpling ingredients:
- 2 chicken breasts, cut into chunks
- 1 tbsp butter
- 1 stalk celery, chopped
- 1/2 large, white onion, finely chopped
- 1 small sweet potato, peeled and diced
- 2 cloves garlic, minced
- 2 cups chicken (or beef) broth
- 1 tbsp arrowroot or other paleo starch of choice
- 1 tsp rosemary, 1tsp thyme, 1/2 tsp sage
- 4 large eggs
- 1/4 cup butter (melted)
- 1/4 tsp baking powder
- 1/4 tsp sea salt
- 1/3 cup coconut flour
Un Stuffed Cabbage Rolls

In a large skillet, heat olive oil over medium heat
- 1-1/2 to 2 pounds lean ground beef or turkey
- 1 tablespoon oil
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 small cabbage, chopped
- 2 cans (14.5 ounces each) diced tomatoes
- 1 can (8 ounces) tomato sauce
- 1/2 cup water
- 1 teaspoon ground black pepper
- 1 teaspoon sea salt
General Tso’s Chicken

1.The previous night, place your chicken to soak in a solution made of 2 cups of water and 2 teaspoons of salt
- The Sauce
- 4 garlic cloves, minced
- 2 tbsp fresh ginger, minced
- 1-2 dried bird's eye chili pepper, crushed
- 3 tbsp date paste
- 1 tbsp toasted halzelnut or almond butter
- 1 1/2 cups water
- 1/4 cup + 1 tbsp rice vinegar
- 1/4 cup + 2 tbsp coconut aminos
- 2 tsp sesame oil
- 1 tbsp coconut oil
- 3 tbsp arrowroot flour
- 1/2 tsp Chinese 5 spice
- 1/4 tsp salt
- 1/4 tsp black pepper
- The Chicken
- 750 g boneless, skinless chicken breasts
- 3 large egg whites
- 1 cup arrowroot flour
- 1/4 cup coconut flour
- 1 teaspoon baking soda
- Deep Frying
- 1 cup coconut oil for frying
- Garnish
- 2 green onions, thinly sliced (to garnish)

SWEET POTATO BROWNIES

Start by pre-heating the oven to 350ºF, then peel the sweet potatoes
- 2 medium to large sweet potatoes
- 2/3 of a cup of ground almonds
- 1/2 a cup of buckwheat flour (brown rice flour will also work) COCONUT FLOUR REQUIRES MORE LIQUID
- 14 medjool dates
- 4 tablespoons of raw cacao
- 3 tablespoons of pure maple syrup
- a pinch of salt
