Zoodles With Creamy Avocado Pesto

1. Create 'zoodles' with our zucchini using a spiralizer
- 2 large zucchinis
- 2 cups arugula
- handful of cherry tomatoes
- 1/3 cup hemp seeds
- For the pesto
- 2 large, ripe avocados
- 1/4 cup of EVOO
- 4 garlic cloves
- 1/4 cup basil
- 2 oz lemon juice or 1 lemon squeezed
- salt + pepper to taste
Seared Halibut Tacos With Grapefruit-Avocado Salsa

1. Combine grapefruit, avocado, red onion, cilantro, jalapeño, and lime juice in a bowl
- 1 Ruby Red grapefruit, segmented and cut into 1-inch pieces
- 1 avocado, halved, pitted, peeled and sliced
- 2 tablespoons red onion, diced
- 2 tablespoons fresh cilantro leaves, chopped, plus sprigs for garnish
- 1/2 jalapeño chile, finely chopped (ribs and seeds removed for less heat, if desired)
- 1 tablespoon fresh lime juice
- 1 tablespoon extra-virgin olive oil
- 4 skinless halibut fillets (about 4 ounces each)
- 8 6-inch corn tortillas
- 1 cup shredded napa cabbage
- salt + pepper

- 3 to 4 teaspoons oil, divided
- 1 lb al fresco fresh Italian-style chicken sausage (sweet or hot)
- 2 cloves garlic, crushed (optional)
- 1 1/4 cups raw, unsalted cashews
- 6 tablespoons (or a rounded 1/3 cup) pine nuts
- 2 tablespoons lemon juice, or to taste
- 1/2 teaspoon salt, or to taste
- 3/8 teaspoon black pepper
- 1 tablespoon minced fresh basil (can sub oregano, marjoram or tarragon)
Bacon & Cheese Stuffed Mushrooms

Scoop out stems and a little extra from each mushroom with a melon baller
- 3 containers button mushrooms
- 1 brick cream cheese
- 1 pkg bacon bits
- 2 tsps. wet garlic
- 1-2 cups shredded mozz/parm

Choco Milkshake

Put all ingredients into blender
- 1 frozen banana (chop ripe banana into chunks then freeze)
- 3/4 cup of nut milk
- 2 tablespoons natural cocoa powder (raw cacao powder works wonderfully too)
- 1 tablespoon of peanut butter (or two if you'd prefer stronger peanut butter flavor)
- 1 tablespoon of chia seeds
- 3 ice cubes

- 1/2 cup Paleo mayo
- 1/2 cup coconut milk
- 1/2 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dill

- 1/2 cup ricotta cheese
- 1/2 cup mayonnaise
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1 teaspoon minced garlic
- 4 large tomatoes
Butternut Squash Lasagna

- 1 lb ground turkey or sausage
- 1 onion, chopped
- 1/2 green pepper, chopped
- 3 cloves garlic, crushed
- 1 15 oz can spaghetti sauce
- 1/4 c extra virgin olive oil
- 1 small butternut squash
- cheese, optional
- possibly remove meat and add extra veggies (mushrooms, zucchini etc)
