Ingredients

  • 1/2

    cup coconut flour

  • 1/2

    cup buckwheat flour

  • 1/2

    cup coconut cream (the creamy part on the top of a can of coconut milk)

  • 5

    eggs

  • 2

    Tbsp. coconut oil

  • 1/2

    tsp. sea salt

  • 1

    tsp. aluminum-free baking powder

  • Stevia, to taste

Directions

Blend together the eggs, coconut oil, stevia and salt. add the coconut flour, buckwheat flour and baking powder, and whisk until you don't see any lumps. Pour into a loaf pan greased with coconut oil and bake at 175C (350F) for 30 minutes.
