Sweet and Sour Chicken Recipe

In a bowl, combine the almond flour, the tapioca starch, and season with salt and pepper to taste
- 3-4 boneless skinless chicken breasts, cut into cubes;
- 1 cup tapioca starch;
- 1/2 cup almond flour;
- 3 eggs, beaten;
- 1 cup pineapple, cut into chunks;
- 1/2 cup fresh pineapple juice;
- 1 cup bell pepper, chopped;
- 1 cup onion, chopped;
- 3 tbsp. honey; (optional)
- 2 tbsp. apple cider vinegar;
- 2 green onions, thinly sliced;
- 1/4 cup chicken stock;
- 1/2 cup coconut oil;
- Sea salt and freshly ground black pepper;
Spinach Apple Salad

In a small bowl, combine vinegar & oil
- 1 cup diced unpeeled apple
- 1/4 cup raisins
- 1/4 cup chopped green onion
- 2 tablespoons olive oil
- 2 tablespoons cider vinegar
- 2 cups torn lettuce
- 2 cups torn fresh spinach
- 1 cup toasted pecans, chopped
Spaghettie Squash with Bacon, Spinach & Goat Cheese

1. Preheat the oven to 400°F and line a large rimmed baking sheet with parchment paper
- 1 medium spaghetti squash
- 1 tablespoon olive oil
- kosher salt and freshly ground pepper

- 2 c grated zucchini (leave peel on)
- 2-3 green onions, sliced
- 3-4 Tbsp cilantro, minced
- 1 clove garlic
- 1 tsp salt
- 1/2 tsp pepper
- 3/4 tsp cumin - optional

- 2 tablespoons of chia seeds with 8 tablespoons of water

- 1/4 of a cup of ice cold water
- 1 tablespoon of tamari
- 1 lemon
- dried oregano
- dried basil
- salt

Green Goddess Salad w/Avocado

Using a food processor, pulse parsley and garlic to finely chop
- 1 C fresh parsley, stemmed
- 2 cloves garlic, peeled
- 2 medium avocados
- 2 tbsp. champagne vinegar
- 1/2 tsp salt
- 1/2 C plain yogurt
- 2 small romaine hearts, chopped
- 1 medium cucumber, peeled, seeded, sliced
- 2 large scallions, slivered
- 1/2 C unsalted, roasted pistachios, coarsely chopped
