Chocolate Crinkles

Mix granulated sugar, oil, vanilla and chocolate in large bowl
- 2 cups granulated sugar
- 1/2 cup vegetable oil
- 2 tsp vanilla
- 4 ounces unsweetened baking chocolate, melted & cooled
- 4 eggs
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup powdered sugar
Tomato Basil CousCous Salad

- 3/4 cup cooked couscous
- 1 Tomato chopped
- 1/3 cup canned chickpeas, drained & rinsed
- 2 scallions, chopped
- 1 tsp. extra-virgin olive oil
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. chopped fresh basil
- Lettuce
Honey Mustard Broccoli

Preheat oven to 400 degrees
- 1/4 cup Chopped Pecans
- 1 tsp. olive oil
- 3 cups broccoli florets
- 2 Tbsp. Honey Mustard Salad dressing
- Salt and pepper to taste
What's in the Fridge Frittata

Preheat the oven to 350 F
- 8 eggs
- 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 cups leftovers (onion, tomatoes, broccoli, cheese, ham, potatoes, chicken, rice, pasta, corn, tortillas, etc)
Dijon Chicken

Melt Butter, Dijon Mustard and Garlic together in Microwave Blend Parsley, Cheese and Bread crumbs Dip Chicken in
- 4-6 Chicken breasts
- 3-4 Tbls of Dijon Mustard
- 1 stick of butter
- 1/3 C Parsley (fresh & cut up)
- 1/2 C Parmasian cheese
- 1 C Bread Crumbs
- 3 Tsp Garlic (fresh)
Citrus Bean Salad

Combine all ingredients in a large salad bowl and mix well
- 15 oz. can garbanzo beans
- 15 oz. can great northern beans
- 15 oz. can kidney beans
- 15 oz. can black beans
- 15 oz. can sweet kernel corn, drained
- 15 oz. can petite diced sweet onion tomatotes
- 2 cups fresh cilantro, chopped
- 2 Tbsp. olive oil
- 1 Tbsp. red wine vinegar
- 1 tsp. salt
- 3/4 tsp. black pepper
Chunky Egg Salad

In a small bowl, soak the onions in cold water, for 15 minutes
- 1/2 medium red onion, chopped
- 12 large eggs
- 1 stalk celery (with leaves), chopped
- 1/2 cup mayonnaise
- 2 tablespoons chopped fresh dill
- 2 tablespoons whole-grain mustard
- 1 tablespoons plus 1 teaspoon freshly squeezed lemon juice
- 2 teaspoons kosher salt (***Use Less***)
- Freshly ground black pepper
- Serving suggestions: 8 slices country-style sourdough bread, sliced tomatoes, or salad greens

Herbed Whole Wheat CousCous

Bring broth, scallions and parsley to a boil in a small saucepan
- 3/4 cup reduced-sodium chicken broth
- 2 scallions, sliced
- 2 tablespoons chopped fresh parsley
- 1/2 cup whole-wheat couscous
Fruit (Berry) Salad

Make simple syrup and chill while prepping fruit ( 1 part water to 1 part sugar
- 1 pint strawberries sliced
- 1 pint blueberries
- 1 mango peeled and cubed
- 1 peach peeled and cubed
- 1/8 cup simple syrup
- 1/4 cup lime juice (about 3 limes)
- 1/2 cup fresh mint chopped
- 1/8 tsp almond extract
Day Before Mashed Potatoes

- 9 potatoes, peeled and cubed (Yukon Gold are best)
- 6 oz. cream cheese
- 1 cup sour cream
- 2 tsp. onion powder
