Enchilada Torte

Combine ingredients (except meat) up through tomato sauce and microwave 70% for 5 minutes
- 1 lb. hamburger
- 1 Tbsp. minced onion
- 1/8 tsp. garlic powder
- 2 tsp. chili powder (I use 2)
- 1/2 tsp. pepper
- 2/3 c. water
- 8 oz. cans tomato sauce
- 1 pkg tortillas
- 1 can refried beans
- 2 cups cheddar cheese
- 16 oz. sour cream
- Black olives (opt)
Spicy Pork Chops

Trim fat from pork chops. Mix spices together
- 4 boneless pork chops
- 1/2 Tbsp. salt
- 1/2 Tbsp. Cumin
- 1/2 Tbsp. black pepper
- 1/2 Tbsp. chili powder
- 1 Tbsp. paprika
- 1/2 Tbsp. garlic powder
- 1/2 Tbsp. ground ginger
Oven Toasted Deli Sandwich

PREHEAT oven to 425°F. Spread one side of each bread slice with butter

What's in the Fridge Frittata

Preheat the oven to 350 F
- 8 eggs
- 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 cups leftovers (onion, tomato, broccoli, cheese, ham, potatoes, chicken, rice, pasta, corn, tortillas, etc)
White Chicken Chili

1) In a large saucepan, saute chicken, onion and garlic powder in oil until chicken is no longer pink
- 1 # boneless skinless chicken breast, cut into 1/2 inch cubes
- 1 medium onion, chopped
- 1/2 teaspoons garlic powder (I added extra just for fun)
- 1 Tablespoon vegetable oil
- 15 ounce each) great northern beans, rinsed and drained
- 1 can (14 ounce) chicken broth
- 2 cans (4 ounce each) chopped green chillies ( instead I used a scoop of jalapeno. Just be careful if you add to much it will be very spicy)
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 1 cup (8ounces) sour cream
- 1/2 cup heavy whipping cream
Beef Enchilada Casserole

Combine beef, seasoning mix, and salt in 10 in
- 1 lb. 95% lean ground beef (or turkey)
- 1 tbsp. taco seasoning mix (or P.C. Southwestern Seasoning Mix)
- 1/4 tsp. salt
- 1 can (10 oz.) enchilada sauce
- 3/4 cup water
- 1/2 cup medium thick and chunky salsa
- 12 yellow corn tortillas (may be too many ; try using 8 instead)
- 1/4 cup snipped fresh cilantro, divided
- 1 cup shredded Colby & Monterey Jack cheese, divided (may not be enough - try using more)
- Sour cream and lime wedges (optional)
Key Lime Pie

1. Dissolve lime gelatin in boiling water, add lime rind and juice
- 1 (9 inch) pie crust, baked
- 1 (3 ounce) package lime flavored gelatin mix
- 1 cup boiling water
- 1 1/2 teaspoons lime zest
- 1/2 cup fresh lime juice
- 1 egg yolk, beaten
- 1 (14 ounce) can sweetened condensed milk
- 1 teaspoon bitters (ok w/o bitters)
- 1 egg white
- 2 drops green food coloring (optional)
Pumpkin Cranberry Muffins

1. Preheat oven to 350 degrees F
- 1-3/4 cups canned pumpkin (1 can)
- 6 egg whites
- 1/4 cup canola oil
- 1-1/2 cups granulated sugar
- 2-1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1-1/4 teaspoons cinnamon
- 1 cup dried cranberries
- 1/2 cup chopped almonds (walnuts)
Marinated Flank Steak

- 1 small red onion, quartered
- 1/3 cup balsamic vinegar
- 1/4 cup caperes
- 2 Tbsp. chopped fresh oregano
- 3 cloves garlic, minced
- 1 1/2 lbs flank steak

- 1 can (13.8 oz) Pillsbury® refrigerated classic pizza crust or 1 can (11 oz) Pillsbury® refrigerated thin pizza crust
- (whole wheat crust ok)
- 1 can (8 oz) pizza sauce
- 24 slices turkey pepperoni with 70% less fat
- 3/4 cup shredded mozzarella cheese (3 oz)
