Oatmeal Chocolate Chip Muffins

Combine oats and milk; allow to stand 15 minutes
- 1 1/4 cup rolled oats
- 1 1/4 cup milk
- 1 egg
- 1/2 cup vegetable oil
- 3/4 cup firmly packed brown sugar
- 3/4 cup semisweet chocolate chips
- 1 cup chopped pecans
- 1 1/4 cup all purpose flour
- 4 tsp baking powder
- 1 tsp salt
Egg Salad

Boil eggs and peel.Seperate the yolks from the whites and place them in seperate bowls
- 6 boiled eggs
- 1/4 cup mayonnaise
- 2 tbsp dijon mustard
- 1/2 tsp miced onion
- 1/4 tsp dillweed
Green Bean, Watercress & Crispy Shallot Salad

(Prepare parts day ahead, toss day of and serve @ room temp) Bring a large pot of salted water to a boil
- Coarse salt and ground pepper
- 1 pound green beans, trimmed
- 1 cup vegetable oil, such as safflower
- 3 shallots, thinly sliced crosswise into rings (3 full heads/bulbs)
- 2 teaspoons all-purpose flour
- 2 tablespoons fresh lemon juice (from 1 lemon)
- 2 tablespoons Dijon mustard
- 3 tablespoons extra-virgin olive oil
- (1-2 Tbsp balsamic vinagrette in dressing is tasty)
- 1 bunch watercress (8 ounces), tough stems removed
Cranberry Apple Lemonade Punch

In a large container, combine cranberry juice, apple juice, and lemonade concentrate; chill
- 4 cups cranberry juice
- 2 cups apple juice
- 1 (12 oz) container frozen lemonade concentrate, thawed
- 1 (2 liter) bottle ginger-ale, chilled
Grain Free Brownies

Preheat oven to 350°. Grease an 8×8 pan
- 2 cups black beans (or 1 can of no salt added)
- 3 lightly beaten eggs
- 1/3 cup melted coconut oil (or melted butter)
- 1/4 cup cocoa powder
- 1/8 teaspoon salt
- 2 teaspoons vanilla extract
- 1/2 cup honey (or other equivalent sweetener)
- 1/2 cup chopped up bittersweet chocolate (or semi-sweet chips if you don’t mind the added refined sugar in them)
- 1/3 cup finely chopped walnuts (optional)
Peanut Butter Swirl Brownies

Heat oven to 350. Grease square pan, 9×9×2 inches
- 2/3 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup butter or margarine, softened
- 2 Tbsp milk
- 2 eggs
- 3/4 cup all-purpose flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 cup creamy peanut butter
- 1/3 cup peanut butter chips
- 1/3 cup Baking Cocoa
- 1/3 cup semisweet chocolate chips
Hamburger Curry over Rice

Brown the beef, onion and garlic in a large skillet
- 1 lb. ground beef / turkey
- 1/4 cup onion, chopped
- 1 clove garlic, minced
- 1 Tbsp. curry powder
- 1 tsp. salt
- Dash of pepper
- Dash of cinnamon
- Dash of ginger
- 1 can (15 oz.) tomato sauce
- 2 cups frozen peas
- 3 cups cooked rice

- 12 oz. uncooked egg noodles
- 12 oz. water-packed tuna fish, drained
- 2 cup button mushrooms, sliced
- 1 cup frozen green peas, thawed
- 16 oz. fat-free sour cream
- 1/2 cup fat-free mayonnaise
- 2 tsp Dijon mustard
- 1 tsp dried thyme
- 1/2 tsp salt, or more to taste
- 1/4 tsp black pepper, or more to taste
- 1/2 cup shredded reduced-fat Monterey Jack cheese, or reduced-fat Swiss cheese

- 1 cup sugar (or 1/2 cup plus container of no-sugar added applesauce)
