Golden Delight Pancakes

Blend in blender and cook on griddle
- 1 c. cottage cheese
- 6 eggs
- 1/2 c. flour (or 1/4 c.)
- 1/4 c. oil
- 1/4 c. milk
- dash of salt
Thai Chicken

Place chicken in crockpot
- 2 1/2 lbs chicken pieces
- 1 cup salsa
- 1/4 cup peanut butter (1/2 cup is better)
- 2 Tbsp. lime juice
- 1 Tbsp. soy sauce
- 1 tsp. minced fresh ginger
- 1/2 cup peanuts, chopped
- 2 Tbsp chopped fresh cilantro
Pumpkin Muffins

Heat oven to 400 degrees. Grease bottoms of 12 medium muffin cups
- 1 1/2 c. all purpose flour
- 1/2 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 c. milk
- 1/2 c. canned pumpkin
- 1/4 c. butter, melted
- 1 egg
- 1/2 c. raisins
Pumpkin Chocolate Chip Bread

Preheat oven to 350. Butter or grease 2 loaf or an 8x8 pan
- CRUMBLE TOPPING:
- 1 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 cup vegetable oil
- 3 large eggs
- 15 oz can pumpkin
- 3 cups flour
- 3 tsp cinnamon
- 1 tsp nutmeg
- 3 tsp baking or pumpkin spice
- 1 1/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp baking powder
- 1 cup chocolate chips
- 3 Tbsp flour
- 3 T brown sugar
- 2 T softened butter
- 2 tsp cinnamon
- 1 tsp baking or pumpkin spice
- 1/8 cup ground pecans (chop in blender)
Chinese Chicken Salad

Make the dressing a couple hours ahead of time and refrigerate
- 3 cups cooked shredded chicken
- 2 med heads lettuce Iceberg and Romaine
- 1 bunch green onion cut up
- 4 - 6 stalks of celery cut up
- 1/2 cup sliced almonds toasted
- 1/4 cup toasted sesame seeds
- won ton wrappers cut up in slices and fried

- 1 Cup sugar
- 1 Tablespoon salt
- 1 Tablespoon pepper
- 8 cloves crushed garlic
- 1 1/3 cup rice vinegar
- 2 cups oil
Mixed Bean Chili

Brown meat - mix in chili powder, onion and green pepper and cook a little longer

Grilled Honey Lime Chicken Sandwiches

SLAW SALAD: Combine vegetables in a bowl
- SLAW SALAD:
- SANDWICHES
- 1 lime, juiced
- 2 tablespoons honey
- 1 rounded teaspoon cumin
- 2 tablespoons extra-virgin olive oil, canola, or corn oil
- 4 (6 to 8-ounce) boneless skinless chicken breast
- 1 teaspoon grill seasoning blend or coarse salt and pepper
- Five Vegetable Slaw Salad, recipe follows
- Toppings: lettuce, tomato, red onion, and sliced avocado
- 1 cup prepared salsa verde
- 4 crusty rolls, split
- 1 pound packaged shredded cabbage
- 1 large red bell pepper, seeded and cut across into thin slices
- 1 large green bell pepper, seeded and cut across into thin slices
- 4 scallions, sliced thinly on an angle (greens and whites)
- 1/2 European seedless cucumber, halved lengthwise and thinly sliced
- 2 limes, juiced
- 1/4 cup (3 healthy drizzles) honey
- 3 tablespoons (a couple of glugs) vegetable or light colored oil

Roasted Fingerlings and Green Beans with Creamy Tarragon Dressing

1. Preheat oven to 425°. Cut fingerlings in half lengthwise, and place in a large bowl
- 1 1/2 pounds fingerling potatoes*
- 1 1/2 tablespoons olive oil, divided
- 1 teaspoon salt, divided
- 3/4 teaspoon cracked pepper, divided
- 1/2 pound tiny green beans (haricots verts)
- 1 1/2 lb. small red potatoes, halved, may be substituted with a bake time of 35 minutes. 1 1/2 lb. russet potatoes, quartered, may be substituted with a bake time of 40 minutes.
- Creamy Tarragon Dressing
- 1/4 cup buttermilk
- 2 tablespoons fresh lemon juice
- 1 teaspoon sugar
- 1 teaspoon Dijon-style mustard
- 3/4 teaspoon salt
- 1/4 teaspoon coarsely ground pepper
- 1/2 cup olive oil
- 2 tablespoons finely chopped green onion
- 1 tablespoon chopped fresh tarragon
Cream of Tukey and Wild Rice Soup
