- 1 cup onion(s), yellow, sliced
- 10 oz. chopped frozen spinach, thawed and well-drained
- 1 cup fat-free ricotta cheese
- 3/4 cup shredded Cheddar cheese
- 2 slices Fat Free singles American cheese
- 1/4 cup fat-free bleu cheese dressing
- 3 large eggs, lightly beaten
- 1 tsp. dijon mustard
- 1 tsp. dried oregano
- 1/2 tsp. table salt
- 1/4 tsp black pepper
- 1/4 cup Non-Fat Grated cheese topping (Parmesan Cheese)
Italian Cheese-Stuffed Meat Loaf

Preheat oven to 350 degrees
- 1 1/2 lb. lean ground beef
- 2 cups soft French bread crumbs (or plain white bread)
- 1/2 cup shredded fresh Parmesan cheese
- 1 1/2 tsp dried basil leaves
- 2 eggs
- 4 cloves minced garlic
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 (8 oz.) can pizza sauce
- 1 1/2 cups shredded provolone cheese (can use sliced and chop up whole pkg)
- 1 (7.25 oz) jar drained and chopped roasted red bell peppers (in the pickle/salad dressing aisle)
- 1/4 cup chopped ripe olives
Skillet Lasagna

Combine sauce and water in a 12-in skillet
- 26 oz) marinara sauce
- 3 cups water
- 8 oz. lasagna noodles
- 1 lb. hot Italian turkey sausage or sausage links, casings removed (can use Italian grnd. turkey)
- 2 garlic cloves, pressed
- 2 oz. Paremsan cheese
- 2 tbsp. chopped fresh parsley, divided
- 1 cup fresh whole milk ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 tsp. coarsely ground black pepper
- Additional grated Parmesan cheese (opt.)
Creamy Curry Pasta Primavera

- 1 serving cooking spray
- 1 lb chicken (opt)
- 1 med onion, chopped
- 1 pound frozen mixed vegetables, thawed (or fresh broccoli, etc)
- 1 Tbsp curry powder
- 1/2 cup fat-free chicken broth, reduced-sodium (makes it watery - try without)
- 2/3 cup plain fat-free yogurt
- 1/4 cup cilantro, fresh, chopped
- 2 medium scallions, thinly sliced
Pasta Lasagna

- 1/2 lb penne pasta
- 1/2 lb ground beef
- 1 (26 oz) jar pasta sauce
- 1 (15 oz) container ricotta cheese
- 8 oz. shredded mozzarella, divided
- 1/4 cup grated parmesan cheese
- 1 egg, beaten
Roasted Sweet Potatoes

- 4 tsp olive oil
- 4 garlic cloves (do not peel)
- 1 tsp fresh rosemary leaves, or 1/2 tsp dried
- 1 lb. sweet potatoes, peeled and cut into 3/4 in. chunks
- 1/4 cup chicken broth
- 1/2 tsp. salt

- 1.5 lbs chicken breasts
- 16 oz. light sour cream
- can of cream of mushroom soup
- 1 sleeve of Ritz crackers, crushed

- 1 pound lean ground beef or turkey
- 1 cup Breadcrumbs
- 1 egg
- 2 tablespoons lemon juice
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon Fresh Rosemary, Chopped
- 1 tablespoon chives, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- 1 medium green bell pepper
- 1 medium red bell pepper
- 1 lb boneless, skinless chicken breasts, cut into 1-in pieces
- 1 Tbsp ground curry powder
- 2 tsp cornstarch
- 1/2 tsp ground ginger
- 1/4 tsp salt
- 1 garlic clove, pressed
- 1 can (14 oz) light coconut milk
- 1 can (14 oz) pineapple chunks in juice, drained
- 2 Tbsp snipped fresh cilantro leaves
- Chopped peanuts or toasted coconut (opt)
Morning Pecan Surprise

- 1 loaf cinnamon raisin bread, cubed
- 1 tube of breakfast sausage, crumbled and cooked
- 6-8 beaten eggs
- 1 and 1/2 cup milk
- 1 and 1/2 cup half and half
- 1 tsp vanilla
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- 1 cup brown sugar
- 1 cup chopped pecans
- 1/2 cup butter
- 2 Tbsp maple syrup (ok w/o - very rich still!)
