- 3 tablespoons groundnut oil (peanut)
- 4 large King prawns (prawns or colossal shrimp), peeled, deveined, shelled and head sliced off, tail left on
- 1 tablespoon freshly grated ginger
- 1 red chile, seeded and finely chopped
- 1/2 onion, chunked
- 2 ounces canned pineapple, blended with 7 ounces pineapple juice
- Handful red bell peppers, chunked
- Handful yellow bell peppers, chunked
- 1 small handful fresh bean sprouts
- 1 pinch salt
- 1 pinch freshly cracked black pepper
- Lime juice, to taste
- Honey, to taste
- 1 spring onion (green), finely sliced
- Serving suggestion: Steamed jasmine rice
Four Hour Beef Stew

Combine all ingredients in Dutch Oven
- Stew meat, 1 lbs., cubed
- 3 med. Potatoes, pared and quartered
- 6 med. Carrots, pared, cut in 1 inch pieces
- 2 med. Onions, quartered
- 1 cup celery
- 2 tsp salt, pepper to taste
- 1 can tomato sauce
- 1 cup water, cup flour, cup water

Directions In a 5-quart Dutch oven or pot, heat oil over medium heat
- 3 tablespoons olive oil
- 2 large onions, coarsely chopped (4 cups)
- 2 green bell peppers, ribs and seeds removed, coarsely chopped (2 1/4 cups)
- 2 red bell peppers, ribs and seeds removed, coarsely chopped (2 1/4 cups)
- 5 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 large tomato, cored and coarsely chopped (2 cups)
- 3 cups mixed cilantro leaves and tender stems
- Coarse salt and ground pepper

- 2 bunches radishes
- 1 bunch scallions
- 1 bunch baby carrots
- 1/4 cup chopped fresh dill

- Sour Cream Cornbread
- 1 cup flour -- all purpose
- 3/4 cup yellow corn meal
- 1/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup sour cream
- 1/4 cup milk
- 1 each egg -- beaten
- 2 tablespoons butter -- melted
- Pour into a greased 8 inch square pan. Bake at 425 for 20 minutes or until a pick comes out clean when inserted in the middle. Cut into 16 squares. Best Served Warm.

- fingers to edge of pan, forming a 1-inch high rim on all sides.
- Bake 5 to 8 minutes until crust just starts
- to brown.
- Meanwhile prepare one of the toppings
- below. Put topping on partially baked crust.
- Finish baking as directed.
