- 1 zucchini, coarsely chopped
- 1 yellow squash, coarsely chopped
- 1 red bell pepper, coarsely chopped

- 1 serrano chile, seeds removed, coarsely chopped

- 3 ripe avocados
- 1 1/2 cups blanched corn
- 1/2 cup finely diced tomato
- 1/3 cup finely chopped cilantro leaves
- 1/2 cup lime juice
- 5 to 5 1/2 cups ice cold water
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper

- How I Roast Spaghetti Squash:
- 1 1. to 375F. to to to 375F. If your squash is quite large, start by slicing off the stem. This makes it easier to slice through and also gives you a flat base to work with. You can do this on a cutting board or an old tea towel.
- 3 3. to With a metal ice cream scoop (my Zyliss scoop works amazing for this!) or spoon, scoop out the seeds & guts. Set aside seeds if you plan to roast them later. And you will, right?

- Ingredients
- 2 1/2 pounds beef chuck roast or bottom round, cut into 1-inch pieces
- coarse salt and ground pepper
- 2 tablespoons vegetable oil
- 1 medium white onion, diced medium
- 1 medium green bell pepper, seeded and diced medium
- 1 large jalapeno, seeded and diced small
- 5 garlic cloves, roughly chopped
- 1 1/2 teaspoons ground cumin
- 3/4 teaspoon chili powder
- 3/4 teaspoon dried oregano
- 6 tablespoons all-purpose flour
- 1 3/4 cups low-sodium chicken broth
- 1 can (14 ounces) diced tomatoes
- 2 bay leaves
- Flour tortillas, warmed, grated cheddar, and cilantro, for serving

- 1/2 baguette, cubed (3 cups)
