Berry Cobbler (Grain, Dairy, Nut Free)

Preheat oven to 350 degrees F
- 4 eggs
- 1/4 cup coconut oil (or butter or ghee)
- 1/4 cup pure raw honey or pure maple syrup
- 1/2 cup coconut milk (or any other type of milk)
- 2 teaspoons pure vanilla extract
- 1/2 cup coconut flour
- 1/4 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 4 cups of frozen or fresh mixed berries (or any fruit)
- 1 additional tablespoon coconut oil
- 1 lemon, juiced and half of it zested
Reeses Chocolate Peanut Butter Rice Krispie Treats

Rice Krispie treats that pack a Reeses Chocolate Peanut Butter punch! Enjoy!
- 6 cups Cocoa Krispies Cereal
- 16 to 18 Reeses Peanut Butter Cups, diced
- 5 tablespoons butter or margarin
- 3 tablespoons light karo syrup
- 1 package (10-ounce) plus 2 heaping cups miniature marshmallows
- 1/3 cup peanut butter
- 1/2 cup chocolate chips
Veal Stew with vegetables

Heat 1 tablespoon oil in a large pot or Dutch oven over medium-high heat
- 2 lbs veal stew, (1kg) cut into 3/4-inch pieces (1.9cm)
- 2 tablespoons extra-virgin olive oil
- 3 tablespoons unsalted butter
- 3/4 lb Yukon gold potatoes, (340g) peeled and cut into 1/2 inch pieces (1.27 cm)
- 2 carrots, peeled and cut into 1/2 inch pieces (1.27cm)
- 1 large white onion, roughly chopped
- 1 medium zucchini, quartered lengthwise and cut into 1/2-inch pieces (1.27cm)
- 1 celery stalk, roughly chopped
- 2 teaspoons finely chopped fresh rosemary
- 1 teaspoon whole black peppercorns, roughly chopped
- 1/4 teaspoon fine sea salt, preferably smoked
- 2 1/2 cups store-bought vegetable broth plus 1 cup water, heated to a simmer, or 3 1/2 cups homemade vegetable broth
- 1 tablespoon plus 1 teaspoon unbleached all-purpose flour
Strawberry Fudge Pie

1 Heat oven to 350°F. Place pie crust in 9-inch glass pie pan as directed on package for one-crust filled pie
- Crust
- 1 box Pillsbury® refrigerated pie crusts, softened as directed on box
- Brownie Layer
- 1 (10.25-oz.) pkg. fudge brownie mix
- 1/4 cup oil
- 2 tablespoons water
- 1 egg
- Cheesecake Layer
- 1 (8-oz.) pkg. cream cheese, softened
- 1/4 cup sugar
- 1 teaspoon vanilla
- 1 egg
- Topping
- 3 cups fresh strawberries, halved
- 2 tablespoons hot fudge ice cream topping
Pressure Cooker Quick Chicken Soup

1. In a 5-7 qt pressure cooker, heat 1 Tbs
- 2 Tbs. vegetable oil
- 1 1/2 lb. bonless, skinless chicken thighs
- 1 medium onion, chopped
- 2 medium carrots, cut into 1/2-inch-thick rounds
- 2 medium celery ribs with leaves, cut into 1/4in thick slices
- 4 cups water
- 2 cups canned low-sodium chicken broth
- 1/4 tsp. dried thyme
- 1 small bay leaf
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 cup fine egg noodles
- 2 Tbs. chopped fresh parsley
Blackberry Bread

1. Combine flour, sugar, baking powder, baking soda, and salt in a large bowl
- Topping:
- 2 cups all purpose flour
- 1/2 cup sugar
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs, lightly scrambled
- 1-1/4 cup milk
- 1/4 cup butter, melted
- 1 Tablespoon vanilla
- 1 cup blackberries (fresh or frozen, thawed), lightly mashed
- 3 Tablespoons flour
- 3 Tablespoons brown sugar
- 3 Tablespoons cold butter

- 1 Large Can of Peaches
- 1 T Cornstarch
- 1 Box of Yellow Cake Mix
- 1 Stick of Country Crock
Pressure Cooker Tortellini & Chicken in Parmesan Cream Sauce

In a pressure cooker, saute bacon for 2 minutes
- 3 slices of bacon, cut into 1/2 inch pieces
- 1/4 cup butter
- 4 shallots, minced
- 3 Tbs. minced parsley
- 4 chicken breast halves, skin removed, boned
- 1 small carrot, thinly sliced
- 1 (8oz.) pkg. dried cheese-filled tortellini
- 1 tsp. dried tarragon
- 2 cups chicken broth
- 1 lb. asparagus, trimmed and cut into 2-inch pieces
- 1/2 cup half-and-half or milk
- 3 Tbs. butter, softened
- 1/3 cup garated parmesan cheese plus extra to serve
- 2 tsp. potato starch or flour
- Parsley sprigs to garnish
Softbatch Cookie Butter Brown Sugar Cookies

Directions: To the bowl of a stand mixer fitted with the paddle attachment (or large bowl and electric hand mixer)...
- 1 large egg
- 1 cup creamy Cookie Butter or Biscoff Spread (the recipe will work with peanut butter as a substitute but the flavor will be totally different)
- 3/4 cup light brown sugar, packed (dark brown may be substituted)
- 1 1/2 tablespoons vanilla extract (yes tablespoons, not teaspoons)
- 3/4 cup plus 2 tablespoons all-purpose flour (or up to 1 cup flour as necessary, see directions below)
- 2 teaspoons cornstarch
- 1 1/2 teaspoons cinnamon
- 1 teaspoon baking soda
- pinch salt, optional and to taste
