Vitamix - Chocolate Coconut Milkshake

1. Place all ingredients into the Vitamix container in the order listed and secure lid
- 2/3 cup coconut milk
- 2 Tablespoons chocolate syrup

Garlic Parmesan Shrimp

Arrange peeled shrimp in a 11 x 7-inch baking dish
- 24 large shrimp (peeled and deveined)
- 1/4 cup olive oil
- 1/4 cup chopped fresh parsley
- 3 garlic cloves (minced)
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- 1/2 cup melted butter
- 1/2 cup toasted Italian breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
RO*TEL CHEESEBURGER SPAGHETTI

Preheat oven to 400 degrees
- 1 1/2 lbs. ground beef
- 1/2 box linguine
- 1 can Mild Ro*Tel Tomatoes
- 1/2 cup diced onion
- 2 garlic cloves - minced
- 1 tablespoon butter
- 2 tablespoons flour
- 2 cups milk
- 8 oz. cheddar cheese
- 1 - 2 jalapeno peppers - seeded and chopped (optional)
- handful cilantro - chopped
- salt and pepper
PILLSBURY PEANUT BUTTER S'MORE BARS

Line an 8x8 pan with nonstick foil
- 1 30-ounce roll Pillsbury Chocolate chip cookie dough
- 16 ounces of Hershey's Bars
- 1 cup smooth peanut butter
- 1/2 cup graham cracker crumbs
- 7 ounce container marshmallow fluff
- chocolate chips for drizzle on top, optional
Soft Pumpkin Cookies (Vegan with Gluten & Sugar-Free Options)

Pumpkin cookies for any eating style! Vegan, vegetarian, gluten-free or sugar-free! This basic recipe works up well...
- 1 cup unsweetened pumpkin
- 1/2 cup coconut oil, or other healthy fat, melted
- 1/4 cup sweetener, either granulated or liquid
- 3 to 4 scoops stevia extract (each scoop is about 1/32 teaspoon), or approximately 4 to 8 tablespoons additional sweetener, to taste
- 1 tablespoon orange flavoring or extract (Try Nielsen-Massey or Frontier Flavor.)
- 1 1/2 cups gluten-free flour
- 1 teaspoon baking soda (If you use flour with gluten, decrease to about 3/4 tsp)
- 1 teaspoon cinnamon
- 1/4 teaspoon salt (I recommend Real Salt)
- 1/2 chopped or ground nuts, optional (We used walnuts. Almonds, macadamias, or even pumpkin or sunflower seeds would be great. Please use soaked and dried nuts if possible.)

- 1/4 cup low fat vanilla yogurt
- 1 cup fresh spinach, lightly packed
- 1/2 medium banana, peeled
- 1/2 apple, quartered, seeded
- 1/3 cup fresh pineapple chunks
- 1 cup ice cubes
Sugar-Free Candied Peanuts

Makes 8 servings of 1/4 cup each
- 2 cups roasted peanuts
- 1 raw egg white
- 1/4 tsp salt
- 1 Tbsp cinnamon
- 1/4 cup sugar-free maple syrup (I like Maple Grove best)
SPINACH AND ARTICHOKE DIP PASTA

Preheat broiler. Lightly oil a 9×13 baking dish or coat with nonstick spray
- 1 pound penne pasta
- 8 ounces bacon ends & pieces, chopped
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 large onion, diced
- 3 tablespoons all-purpose flour
- 1/2 cup chicken broth
- 2 cups milk
- 1 (10-ounce) package frozen chopped spinach, defrosted and drained
- 1 (14-ounce) can artichoke hearts, chopped
- Few grates of fresh nutmeg
- Kosher salt and freshly ground black pepper, to taste

- 1 1/2 cups grated Parmesan, divided
