Pressure Cooker Turkey Breast with Marsala & Mushrooms

Chicken Marsala is a great Italian dish served with vegetables
- 2 (1 1/4 pound) bonless, skinless turkey breast roasts
- 1/4 teaspoon salt, plus more to taste
- 1/4 teaspoon pepper, plus more to taste
- 2 tablespoon olive oil
- 6 ounces white mushrooms, thinly sliced
- 3 tablespoons shallots, chopped
- 1 garlic clove, minced
- 1/2 teaspoon dried thyme
- 2/3 cup chicken stock
- 1/3 cup dry marsala
- 1 1/2 tablespoon cornstarch
- 3 tablespoon heavy cream
Chicken Chimichanga with Jalapeño Cream

1 In deep 12-inch skillet or wok, heat olive oil over medium heat
- 2 tablespoons extra-virgin olive oil
- 2 boneless skinless chicken breasts (1/2 lb), cut into 1-inch pieces
- 1 can (18.5 oz) Progresso® Traditional southwestern-style chicken soup
- 1 package (3 oz) cream cheese, softened
- 1 tablespoon whipping cream
- 1 jalapeño chile (from jar), finely chopped
- 1 tablespoon jalapeño liquid (from jar)
- 2 cups canola oil
- 4 Old El Paso® flour tortillas for burritos, 8 inch (from 11-oz package)
- 1 cup shredded Cheddar-Monterey Jack cheese (4 oz)
- 2 medium green onions, sliced (2 tablespoons)
Healthy Breakfast Hash

Heat a small non-stick skillet over medium heat
- Non-stick cooking spray
- 1 cup frozen shredded potatoes or “hash browns” (you could also grate your own)
- 1-2 slices of sweet onion chopped
- 1 tbsp (7g) real bacon bits
- 1 slice of Canadian bacon cubed
- 1/3 about 1/3 of a red bell pepper chopped
- 1 handful of baby spinach leaves chopped
- 1 egg beaten
Cinnamon Roll Cake

Preheat oven to 350 degrees
- CAKE:
- 3 cups Flour
- 1/4 teaspoon Salt
- 1 cup Sugar
- 4 teaspoons Baking Powder
- 1 1/2 cups Milk
- 2 Eggs
- 2 teaspoons Vanilla
- 1/2 cup ( 1 stick) Butter, melted
- TOPPING:
- 1 cup ( 2 sticks) Butter, softened
- 1 cup Brown Sugar
- 2 Tablespoons Flour
- 1 Tablespoon Cinnamon
- GLAZE:
- 2 cups Powdered Sugar
- 5 Tablespoons Milk
- 1 teaspoon Vanilla
Pressure Cooker Pot Roast a la Francaise

1. In a 5-7 qt. pressure cooker, heat the oil over medium-high heat
- 1 Tbs. vegetable oil
- 3 1/2 lb. beef bottom roast, tied
- 1/2 tsp. salt, plus more for taste
- 1/4 tsp. pepper, plus more for taste
- 3 cups beef stock
- 1 lb. red potatoes, cut into 1 inch pieces
- 2 medium carrots, cut into 1 inch lengths
- 2 medium parsnips, cut into 1 inch lengths
- 1/3 cup small pasta, cooked
- 2 Tbs. chopped parsley
- Parmesean cheese, for serving
- salt, pepper, and dijon mustard, for serving

Preheat oven to 425 degrees
- 3 c. flour
- 1 1/2 t. salt
- 1 T. sugar
- 1 1/2 t. baking powder
- 1 stick butter
- 3/4 c. buttermilk
- 1 egg
- 1/4 c. water

Pecan Crust: Combine crumbs, sugar, pecans, cinnamon, and butter in a small bowl
- Pecan Crust:
- 1/2 cup graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup toasted pecans, finely chopped
- 1/2 tsp. cinnamon
- 1/4 cup butter, melted
- Spiced whipped cream:
- 1 cup whipping cream
- 3 Tbs. powdered sugar
- 1/8 tsp. ground cinnamon
- Filling:
- 2 (8oz.) pkgs. cream cheese, softened
- 1 1/4 cups powdered sugar
- 1 tsp. grated orange peel
- 2 large eggs, at room temperature
- 1 cup canned pumpkin
- 2 Tbs. butter, softended
- 3 Tbs. cornstarch
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/8 tsp. ground ginger
- 1 cup water
Pressure Cooker Honey Chicken Wing Appetizer

In a pressure cooker, heat oils, add chicken, and saute, turning to brown on all sides
- 2 Tbs. olive oil
- 2 Tbs. sesame oil
- 12 chicken wings, cut apart at joints
- 1/2 cup chicken broth
- 1/2 cup plus 1 Tbs. honey, divided
- 1/4 cup soy sauce
- 2 Tbs. sherry
- 2 garlic cloves, crushed
- 1 tsp. crushed red pepper flakes
- 3/4 tsp. grated ginger root or 1/4 tsp. ground ginger
- 1/4 cup sesame seeds
"FRIED" PICKLES

- 1 jar pickle slices
- 2 eggs
- 1/3 cup flour
- 1 Tbsp Worcestershire sauce
- 1 tsp hot sauce
- 1 tsp garlic powder
