Baked S'mores

Preheat oven to 350. Grease bottom of pan
- 1/2 cup butter, room temperature
- 1/4 cup brown sugar
- 1/2 cup sugar
- 1 large egg
- 1 tsp vanilla
- 1 1/3 cups flour
- 1/4 tsp salt (optional)
- 3/4 cup graham cracker crumbs (approximately 5 full graham crackers)
- 1 tsp baking powder
- 2 or 3 super-sized (5 oz.) chocolate bars (e.g. Hershey’s)
- 1 1/2 cups marshmallow creme/fluff (or mini marshmallows if you must!)
Fettuccine with Veal in a Roasted Red Pepper Cream Sauce

A simple and absolutely delicious pasta – delicate Veal married with succulent roasted red peppers and cream
- 1 lb veal cutlet, cut into bite size strips 500 g
- 2 sweet red peppers
- 2 tablespoons olive oil 30 ml
- 2 cloves garlic, minced
- 1/2 cup finely chopped red onion 125 ml
- 1 tablespoon chopped fresh rosemary 15 ml (or 1 teaspoon /5 ml crumbled dried parsley)
- 1/4 cup brandy or white wine 50 ml
- 1/2 cup whipping cream 125 ml
- 12 oz fettuccine 375 g
- salt and pepper
- fresh rosemary sprigs
- shaved Parmesan
Homemade Spreadable Butter

Let the butter slowly come to room temperature
- 1 cup unsalted butter (I prefer organic)
- 3/4 cup grapeseed oil (I prefer organic), light olive oil, or canola oil
- 1/4 tsp salt, or to taste
Pressure Cooker Deviled Short Ribs

1. In a 5-7 qt. pressure cooker, heat 1 Tbs
- Deviled Crust:
- 2 Tbs. olive oil
- 4 lbs. meaty beef short ribs
- 1/4 tsp. salt
- 1 medium onion, chopped
- 1 medium carrot, chopped
- 3 garlic cloves, crushed and peeled
- 2 cups water
- 1/4 tsp. thyme
- 1/4 tsp. whole black peppercorns
- 1 bay leaf
- non-stick cooking spray
- 6 Tbs. Dijon mustard
- 1 garlic clove, crushed through a press
- 1/8 tsp. ground red pepper flakes
- 2 cups fresh italian or french bread crumbs
- 2 Tbs. olive oil
Pressure Cooker Beef Stroganoff

In a pressure cooker, heat oil
- 1/4 cup olive oil
- 1 large onion, sliced
- 2 glaric cloves, crushed
- 1 1/2 pounds stewing beef, thinly sliced
- 1/2 beef broth
- 2 Tbs. sherry
- 1/3 cup parsley, chopped
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 tsp. dried tarragon
- 1 lb. mushrooms, sliced
- 2 medium tomatoes, cut in eighths and seeds removed
- 1/2 cup sour cream
- 1/2 tsp. prepared mustard
- 2 Tbs. potato starch or flour
- Cooked noodles or rice
P.F. Chang’s Lettuce Wraps

1. Heat a large, non-stick skillet on high
- 1 lb ground chicken breast
- 1/2 onion, minced
- salt & pepper
- 2 garlic cloves, minced
- 1 ″ knob ginger, peeled & minced
- 2-1/2 Tablespoons soy sauce
- 1 Tablespoon + 1 teaspoon rice vinegar
- 1 Tablespoon sesame oil
- 1 Tablespoon peanut butter
- 1/2 Tablespoon water
- 1/2 Tablespoon honey
- 2 teaspoons chili garlic sauce (or more if you like it hotter)
- dash of pepper
- 3 green onions, chopped
- 1/2-8oz can sliced water chestnuts, drained & chopped
- 1/4 cup peanuts, chopped
- 10-12 large outer lettuce leaves, rinsed and patted dry

- 1/2 pound low fat chicken sausage, sliced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 2 Tbs. all purpose flour
- 1 (14.5 oz) can reduced sodium chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 Tbs. chopped fresh thyme
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 - 1/2 tsp cayenne
- 2 bay leaves
- 1 (10 oz.) pkg. frozen sliced okra
- 1/2 lb. peeled and deveined large shrimp
- 3 cups hot cooked brown rice

Preheat oven to 350 degrees (F)
- Cake:
- 1 1/4 cups pumpkin puree
- 1 cup sugar
- 1 cup packed dark brown sugar
- 1 1/2 cups unsalted butter, softened*
- 5 large eggs
- 1 tsp. vanilla
- 2 3/4 cups cake flour, divided
- 3 tsp. pumpkin pie spice
- 1 tsp. baking powder, divided
- 1/2 tsp. baking soda, divided
- 1 tsp. salt, divided
- 3/4 cup Dutch-processed unsweetened cocoa
- 1 1/3 cup regular or low-fat buttermilk, divided
- Cream Cheese Glaze:
- 1/2 cup powdered sugar
- 4 oz. (1/2 cup) regular or low-fat cream cheese
- 1/2 tsp. vanilla
- 3-4 tbsp. milk (or more if you want a thinner glaze)
Spaghetti with Shrimp in a Creamy Tomato Sauce

Put the tomatoes, onion, chili flakes, basil, garlic and butter in a heavy pan , season with pepper
- 1 lb medium raw shrimp, shell removed
- 3/4 lb spaghetti or angel hair pasta
- 1 tablespoon olive oil
- 6 medium tomatoes, diced
- 1 small onion, or 1/4 cup green onion, finely chopped
- 1/4 teaspoon hot chili flakes
- 1/2 teaspoon dried basil
- 1 garlic clove, pressed
- 4 tablespoons unsalted butter
- 1 cup dry white wine: Sweet wine won’t work!!
- 1/2 cup heavy cream
- salt and pepper to taste
- Parmesan to serve
