Nut Coconut Chocolate Bars

- 1 1/2 sticks butter
- 1/4 c sugar
- 1 vanilla bean, seeds scraped
- 1 egg yolk
- 1 1/2 c ap flour
- 1/2 tsp salt
- 4 oz bacon, finely diced
- 3 c sweetened shredded coconut (6 1/2 oz)
- 12 oz semisweet or bittersweet chocolate chips
- 1/2 c salted roasted almonds, chopped
- 1 16 oz jar dulce de leche
- 1 14 oz can sweetened condensed milk
Banana Macadamia Pudding Cake

- Cake
- 2 large ripe bananas, unpeeled
- 1 1/2 c ap flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 2 c sugar
- 2 eggs, lightly beaten
- 1 1/2 c buttermilk
- 1 tsp baking soda
- 3 tbs unsalted butter, melted
- 1/4 c heavy cream
- 1 tsp finely grated orange zest
- 1 1/2 c unsalted roasted macadamia nuts, coarsely chopped
- Honey Cream
- 1/4 c plain yogurt
- 1/4 c honey
- 1/4 tsp finely grated lime zest
- 1/4 tsp finely grated orange zest
- 2 tbs kahlua
- 2/3 c heavy cream
Milk Cake with Chocolate Frosting

- 1 c milk
- 1 stick unsalted butter
- 4 eggs
- 2 c sugar
- 2 c flour
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp vanilla
- 4 oz unsweetened chocolate
- 3 c sugar
- 2 tbs light corn syrup
- 7 oz milk
- 4 tbs butter
Fish Tacos

This is a simple dish inspired by Health magazine
- 4 fillets of white fish (tilapia or flounder works fine)
- 4 tbs evoo (2 tbs separated)
- sea salt
- freshly ground pepper
- 2 tomatoes chopped
- 2-4 radishes depending on size
- 1 jalapeno, thinly sliced
- 2 cups shredded brussel sprouts ( if brussels sprouts are a favorite, you can substitute cabbage.)
- 1 cup cilantro sprigs chopped
- 2 limes cut into wedges
- corn tortillas
- salsa (optional)
- sour cream (optional)

Orecchiette with Salmon, Arugula and Artichokes

- 1 pkg orecchiette
- 1/4 c evoo
- 1 garlic, minced
- 5 oz baby arugula
- 1/2 c artichokes, drained quartered (marinated are best)
- 1/4 c pitted green olives, chopped
- 2 tbs capers, drained
- 3/4 lb cooked salmon, flaked (smoked is great)

Devil's Food Cake

- 2 tbs chopped basil (fresh is key)
