This Slow Cooker Beef Chili is a quick & easy fall dinner! Beef, beer, liquid smoke, vegetables, & spices cook low
- 2 pounds ground beef
- 1 (15 oz) can dark red kidney beans drained and rinsed
- 1 (15 oz) can pinto beans drained and rinsed
- 1 (28 oz) can diced tomatoes
- 1 (6 oz) can tomato paste
- 1 small yellow onion diced
- 1 green bell pepper seeded and chopped
- 1 jalapeno pepper seeded and diced (omit if you don’t like spicy, leave seeds in if you do)
- 4 cloves garlic minced or pressed
- 1 (12 oz) bottle beer I used an IPA
- 1 tablespoon Worcestershire sauce
- 1 1/2 tablespoon Stubb's Hickory Liquid Smoke
- 1 cup beef broth**
- 2 tablespoons chili powder
- 1 tablespoon brown sugar
- 3 teaspoons ground cumin
- 1 1/2 teaspoon dried oregano
- 1 1/2 teaspoon dried basil
- 1 1/2 teaspoon Paprika
- 1-2 teaspoons salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon crushed red pepper flakes

Bring stock to boil in a saucepan over high heat
- 2 cups low sodium chicken broth
- 1 cup long grain rice
- 3 teaspoons olive oil
- 1 onion, sliced thinly
- 1 garlic clove, minced
- 1 green bell pepper, seeded and chopped
- 1 ⁄2 orange bell pepper, seeded and chopped
- 1 ⁄2 red bell pepper, seeded and chopped
- 1 ⁄2 lb mushroom, sliced
- 2 cups canned crushed tomatoes (I used Muir Glen)
- 1 ⁄4 cup pimento stuffed olive, sliced
