Greek Lemon Chicken and Potato Bake

Preheat oven to 425 degrees F (220 degrees C)
- 2 chicken leg quarters
- 1/2 (24 ounce) bag small potatoes
- 1/4 cup olive oil
- 1 lemons, juiced, divided
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 1-1/2 teaspoons salt
- 1-1/2 teaspoons ground black pepper
- 1 tablespoon lemon and herb seasoning
- 1/2 (12 ounce) package fresh green beans or halved brussel sprouts
SPAGHETTI SQUASH WITH ROASTED RED PEPPERS

Preheat oven to 400°F. Drizzle flesh side of Squash with Olive Oil and season with Salt and Pepper
- 1 medium Spaghetti Squash (cut in half, seeds removed)
- 3 Cloves Garlic (minced)
- 1 cup Roasted Red Peppers (chopped)
- 1/4 cup Parsley (chopped)
- Extra Virgin Olive Oil
- Salt and Freshly Ground Black Pepper
Scallion and Cucumber Raita

Beat yogurt and milk lightly together in a bowl until smooth
- 1 cup nonfat plain yogurt
- 2-3 tbsp skim milk or sub
- 1 cup diced cucumber
- 2 scallions, chopped
- 1/2 tsp sugar
- 1/4 cup roasted and crushed cumin seeds
- pinch chili powder
- freshly ground black pepper
Crumb Coated Chicken Thighs - 8 points

In a large resealable plastic bag, combine the first seven ingredients

One Pan Tuscan Garlic Chicken Tortellini

Creamy one pan tuscan garlic chicken tortellini has incredible flavor and comes together in just 30 minutes!
- 4-6 boneless skinless chicken thighs OR 4 boneless skinless chicken breasts pounded to even thickness
- 3 teaspoons minced garlic
- 3 cups fresh baby spinach leaves (or 1/2 cup frozen and thawed)
- 1/2 cup sundried tomatoes (see note)
- 1/2 cup chicken broth (I used low sodium)
- 1/2 cup heavy cream or other milk (see note)
- 8 ounces tortellini (use your favorite, I used three cheese tortellini)
- salt and pepper to taste

- 4 -6 medium potatoes
- 4 -6 teaspoons butter or 4 -6 teaspoons margarine, melted
- Spice Topping
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 ⁄4 teaspoon salt
- 1 pinch cayenne pepper
One Pot Fish Paella

This delicious and light Paella (rice dish) with fish gets cooked in one pot from start till the end!
- 1 tbsp butter
- 1 tbsp olive oil
- 4 garlic cloves, chopped
- 1 large leek, halved lengthwise and chopped in half circle shape (We are going to use only half the leek)
- Pinch of salt
- 1/2 cup frozen or fresh green peas
- 1 large tomato fresh or frozen, chopped
- 1.5 cups rice (I used basmati rice as that's what I like but if you want, you can use any short grain rice used in traditional paella recipes) OR my LASTEST FAVORITE 4 cups of Minute® Ready to Serve Rice Basmati Rice
- 3.5-4 cups water OR 1 cup water in case of Minute® Ready to Serve Rice
- Salt & Black pepper to taste
- Big pinch of saffron
- 1-2 tsp hot paprika
- Handful of fresh parsley, chopped
- Juice of 1/2 a lime or lemon
- 1-2 white fish fillet (I used tilapia)
