This Chimichurri Chicken & Potato Sheet Pan Meal has it all
- Serves 2-3
- 3/8 cup chopped flat-leaf parsley
- 1/8 cup red wine vinegar
- 2 garlic cloves
- 1 1/2 tbsp water
- 3/8 tsp salt
- 3/8 tsp ground pepper
- 3/8 tsp red pepper flakes
- 3 tbsp extra virgin olive oil
- 3/4 lb baby potatoes cut in half
- 4 boneless, skinless chicken thighs, trimmed
Sauteed Cabbage and Carrots (2 ww pts)

Heat canola oil in a saucepan over medium heat
- 1 ⁄2 head cabbage, finely shredded
- 1 carrot, shredded
- 2 garlic cloves, crushed
- 1 ⁄2 medium onion, finely chopped
- 1 ⁄2 teaspoon fresh ginger, crushed
- 1 ⁄8 teaspoon black pepper
- 1 ⁄2 teaspoon salt
- 1 ⁄2 teaspoon white vinegar
- 1 tablespoon canola oil
Chicken Potato Crock Pot Stew 10 pts

Place onion, carrots, potatoes, tomatoes, raisins, garlic, and spices in crock pot and stir
- Yields 4 servings
- 1 small onion, chopped
- 3-4 cloves garlic, minced
- 1 14.5 oz cans stewed tomatoes, undrained
- 2-3 medium potatoes, cut into bite-size pieces
- 1 C chopped carrots
- 1/2 C raisins
- 1 t salt
- 1 t ground cumin
- 1 t cinnamon
- 1 t curry powder
- 1 t ginger
- 1 t crushed red pepper
- 1 pkg chicken drumsticks
- juice of 1/2 lemon (about 1 TBS)

Place potatoes and onion in crockpot
- 4 boneless skinless chicken breasts or thighs
- 3 medium potatoes, peeled and chopped
- 1 medium onion, sliced
- 1 pkg fresh baby spinach
- 1 can (14 ounce size) coconut milk
- 1 cup chicken stock
- 2 TBSP curry powder (omit if using curry sauce)
- 1 serving of S&B golden curry sauce mix, med hot
- 1 teaspoon hot pepper sauce (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper

- 8 bone-in, skin-on chicken thighs
- 1/2 teaspoon dried basil

- 1/4 teaspoon dried rosemary

- 2 pounds baby red potatoes, quartered

- 2/3 cup chopped onion
- 1/2 cup finely chopped carrot
- 1/2 cup chopped sweet pepper
- 2 garlic cloves, minced
- 1 (14 1/2 ounce) cans cut up tomatoes, undrained
- 8 oz instant pot fresh tomato sauce
- 1 cup chicken broth
- 1/4 cup dry red wine
- 2 bay leaves
- 1 teaspoon dried thyme, crushed
- 1/2 teaspoon cajun seasoning
- 1/4 teaspoon ground cumin
- 1/4 teaspoon crushed red pepper flakes
