Instructions Preheat oven to 350 degrees
- 1 (family size) bag Doritos, any flavor (I used Nacho Cheese)
- 1 onion, diced
- 1 pound lean ground beef
- 1 clove garlic, minced
- 1 cup salsa
- 1 package low sodium taco seasoning (or homemade taco seasoning)
- 1 cup sour cream
- 1 can cream of chicken or mushroom soup
- 2 cups shredded cheese, (I used tex mex blend or cheddar)
- Lettuce
- Tomato
- Olives
- Sour Cream
Moqueca – Brazilian Fish Stew

- 1 1/2 to 2 lbs of fillets of firm white fish such as halibut, swordfish, or cod, rinsed in cold water, pin bones removed, cut into large portions
- 3 cloves garlic, minced
- 4 Tbsp lime or lemon juice
- Salt
- Freshly ground black pepper
- Olive oil
- 1 cup chopped spring onion, or 1 medium yellow onion, chopped or sliced
- 1/4 cup green onion greens, chopped
- 1/2 yellow and 1/2 red bell pepper, seeded, de-stemmed, chopped (or sliced)
- 2 cups chopped (or sliced) tomatoes
- 1 Tbsp paprika (Hungarian sweet)
- Pinch red pepper flakes
- 1 large bunch of cilantro, chopped with some set aside for garnish
- 1 14-ounce can coconut milk
- 1 Tbsp olive oil
- 1/2 onion, chopped
- 1 clove garlic, minced
- 1 cup white rice
- 1 3/4 cups boiling water (check your rice package for the appropriate ratio of liquid to rice for the type of rice you are using)
- 1 teaspoon salt
Baked Cod with Chorizo & White Beans-2 pts

Preheat oven to 425°F. Coat a 9-by-13-inch baking dish with cooking spray
- 4 servings
- 1 teaspoon extra-virgin olive oil
- 1 shallot, finely chopped
- 4 ounces homemade turkey chorizo
- 1 teaspoon chopped fresh thyme
- 1 pint grape tomatoes, halved
- 1/2 cup dry white wine, divided
- 1 15-ounce can great northern beans, rinsed
- 1/2 teaspoon salt, divided
- 1 1/4 pounds cod, cut into 4 pieces (see Tips)
- Freshly ground pepper, to taste

- baguette bread, sliced 1/4-inch thick
- olive oil for brushing on bread slices
- 1 garlic clove cut in half
- 6 to 8 ounces (1/2 pound) deli roast beef , sliced thin

Three Meat Marinades

For all 3 marinades: For flank steak, marinade overnight all other meat 2 hrs or so, turning occasionally
- First Marinade
- 3/4 cup dry red or white wine
- 1 minced onion
- 1/2 cup chopped parsley
- 1/2 tsp tarragon
- 1/2 tsp thyme
- 1 1/2 tsp garlic salt
- 1 bay leaf
- dash of red pepper
- Second Marinade
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 3 TBS honey
- 1 1/2 tsp garlic powder
- 1 1/2 tsp ginger
- 1 cup chopped green onion
- 2 TBS vinegar
- Third Marinade - teriyaki
- 1/2 cup water
- 1/4 cup soy sauce
- 2 TBS sugar
- 2 tsp ground ginger
- 1 med onion chopped
- 2 cloves garlic minced

In a 1-1/2-qt. slow cooker, combine the first five ingredients
- 4 packages (2 ounces each) thinly sliced deli corned beef, finely chopped
- 1 package (8 ounces) cream cheese, cubed

- 1 ⁄4 cup water
- 1 ⁄4 cup canola oil
- 4 garlic cloves, minced
- 3 tablespoons brown sugar
- 2 tablespoons ground black pepper
- 1 teaspoon white pepper
- 1 ⁄2 teaspoon ground ginger
- 1 teaspoon salt
