Ingredients

  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 2 cups finely-chopped green tomatoes
  • 1 cup well-drained crushed pineapple
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup chopped nuts
  • 1/2 cup golden raisins
  • 2 Tablespoons sesame seeds

Step 1

Preheat oven to 350 degrees. Grease and flour 2 loaf pans. In a large bowl, beat the eggs with the vegetable oil, sugar, and vanilla, until light and fluffy. Add the tomatoes and pineapple. In a separate bowl, mix the flour, baking soda, salt, and cinnamon. Stir the flour mixture into the tomatoes mixture. Add the nuts, raisins, and sesame seeds. Divide batter between the 2 pans, and bake about 1 hour, until crust is golden brown and a toothpick inserted in the center comes out clean.
