Creamy White Beans

Combine beans, onion, garlic and thyme in a saucepan
- 1 c dried cannellini beans, soaked overnight in water to cover, then drained
- 1 medium onion, halved
- garlic
- 2 sprigs thyme
- salt
- pepper
- 1/4 c heavy cream
- 2 T unsalted butter
Arugula Salad with Pancetta and Cannellini Beans

Cook pancetta under broiler
- pancetta
- cannellini beans
- arugula
- cheese, grated
Chicken Salad

Combine all ingredients and serve on toast
- 1 1/4 lb chicken, cooked and cubed
- 1 1/4 c celery, chopped
- 1 1/4 c green onion, chopped
- 1 c walnuts, toasted and chopped
- 3/4 c (3 oz) dried tart cherries
- 3/4 c mayonnaise
- 1/2 c parsley, chopped
- 2 T lemon juice
- 1 t hot pepper sauce
- wheat toast
Corn Relish

Grill corn with olive oil, salt and pepper
- 1 1/2 c fresh corn kernels
- 12 oz cherry tomatoes
- 1/4 c green onion, chopped
- 3 T basil, chopped
- 2 T olive oil
- salt
- pepper
Ann Benjamin's Mushroom Dip

Double recipe. Mix all ingredients and top with some of the cheese
- 1/3 c parmesan cheese
- 1 c shredded cheese
- 1 envelope Good Seasonings Italian dressing mix
- 8 oz fresh mushrooms, chopped
- 3/4 c mayo
- 1/4 t cayenne pepper
Caesar Salad

Combine all ingredients and mix with lettuce
- Dressing:
- romaine lettuce, cut up
- 1/3 c lemon juice
- 1 T red wine vinegar
- 1 T anchovie paste
- 1 T garlic, minced
- 1 T Dijon mustard
- salt and pepper
- 1 c olive oil
- 1 T mayo
- parmesan cheese
- toasted pine nuts

- truffle oil

Ann Benjamin's Bean Salsa

Rinse and drain beans. Mix all ingredients
- 1 can shoepeg (white) corn
- 1 can black beans
- 1 can black-eyed peas
- 1 small red pepper, diced
- 1 c celery, diced
- 1 c onion, diced
- 1 jalapeno, diced
- 1 c canola oil
- 1/2 c sugar
- 1/2 c apple cider vinegar
Brown Sugar Shortbread

Preheat oven to 325. Butter a 9" round cake pan
- 1 c (2 sticks) unsalted butter
- 1 c firmly packed light brown sugar
- 1 t vanilla extract
- 2 1/4 c sifted flour

- 1 lb mozzarella cheese balls, cut up
- 8-10 cherry tomatoes
- 1/2 c green pepper
- 1/2 c celery
- 1/2 c arugula
- 1/2 c endive
- basil
- 3 T olive oil
- 1 1/2 T lemon juice
