Tomato Slices Broiled With Bacon And Cheese

Fry bacon in heavy large skillet over medium heat until crisp
- 1 pound bacon slices
- 1 large onion, chopped
- 8 ounces gruyere cheese, grated
- 1/2 cup minced fresh parsley
- 2 tablespoons chopped fresh basil or 2 teaspoons dried, crumbled
- 6 large beefsteak tomatoes cut into 1/2-inch-thick slices
- Salt and freshly ground pepper

Preheat oven to 300 degree
- 1/2 small baguette (about 12 inch)
- 1 large garlic clove mashed
- Olive oil
- 6 medium to large tomatoes cut into chunks
- 1/2 medium onion chopped
- 3 t. Coarsely chopped fresh basil
- 1/4 c. Balsamic vinegar
- 1/2 c. Olive oil
Aunt Maureen's Lentil Salad

Cook lentils in salted water, about 20 min
- 1 c lentils
- 3 T olive oil
- 1/4 c sun dried tomatoes, chopped and drained
- 2 T white wine vinegar
- 1/4 t dried thyme
- feta or blue cheese
- salt
- pepper
Garides Me Feta

In a heavy skillet, sauté onion in butter and oil until soft
- 1/2 c minced onion
- 1 1/2 T butter
- 1 1/2 T oil
- 1/2 c dry white wine
- 4 ripe medium tomatoes, peeled, seeded and chopped
- 1 small clove garlic, minced
- 1 t salt
- 1/4 t freshly ground pepper
- 3/4 t oregano
- 4 oz feta cheese, crumbled
- 1 lb raw large shrimp, shelled and deveined
- 1/4 c chopped fresh parsley

- 4-5 onions chopped
- 1 cup sugar
- 1/2 cup apple cider vinegar
- 2 cups water

- 2 large vidalia onions, unpeeled
- 1 head garlic, unpeeled, smashed to separate cloves slightly
- 2 tablespoons olive oil
- Scant pinch cayenne pepper
- 1/8 teaspoon salt, plus more to taste.
Mrs. Riley's Crumb Cake

Mix flour, salt, baking powder and sugar
- Crumbs:
- 2 c flour
- 1/2 t salt
- 2 t baking powder
- 1/2 c sugar
- 1/2 c shortening
- 1 egg
- 1 c milk
- 1 t vanilla
- 1/2 t orange extract
- 1/2 c brown sugar
- 3/4 c flour
- 3/4 t cinnamon
- 4 T melted butter

- 9 T extra-virgin olive oil
- 3 T fresh lemon juice
- 2 T chopped shallot
- 1 t grated lemon peel
- 2 c finely chopped radicchio
- 2 c finely chopped curly endive
- 2 c finely chopped butter lettuce
- 1 c finely chopped arugula
- 1/3 c crumbled blue cheese
Linguine with Chicken, Leeks and Tomatoes

- 2 T olive oil
- 4 boneless skinless chicken breast halves
- 1/4 c (1/2 stick) butter
- 3 large leeks (white and pale green parts only), thinly sliced or 1 large onion, chopped
- 4 garlic cloves, minced
- 1 28-ounce can italian plum tomatoes, drained, chopped
- 2 T dry vermouth
- 1 pound linguine, freshly cooked
- 1 c grated parmesan
- 1/4 c chopped fresh basil (optional)
