Betsy Edward's Crunchy Apple Cobbler

Line a buttered 10" x 6" x 1 1/2" baking dish with apple slices (or 9" pie plate or 9" x 13" pan for double recipe)
- 3 c sliced apples
- 1/4 c sugar
- 1/2 t cinnamon
- pinch of nutmeg
- 1 c flour
- 1 c sugar
- 1/2 t salt
- 1 egg
- 6 T butter, melted
Ravioli

Heat oil in heavy large skillet over medium heat
- 2 tablespoons olive oil
- 3 large shallots, minced
- 8 ounces arugula, chopped (about 8 cups)
- 6 ounces soft fresh goat cheese (such as montrachet), crumbled
- 1/2 cup (about 1 1/2 ounces) freshly grated parmesan cheese
- Nonstick vegetable oil spray
- 42 (about) wonton wrappers (from one 12 ounce package)
- 2 large egg whites, whisked just until foamy
Apple Salad

Combine salad ingredients in a large bowl
- Dressing:
- leaf lettuce - Boston, red leaf or Romaine
- bagel chips
- 1 red onion
- 2 green apples
- crumbled blue cheese
- 1 c oil
- 1 t dried mustard
- 1 t salt
- 3 T poppy seeds
- 1 c sugar
- 1 c cidar vinegar
Tomato Pancetta Butter

Cook chopped pancetta in large skillet over medium-high heat until crisp and brown
- 6 ounces thinly sliced pancetta or bacon, coarsely chopped
- 1/4 cup (1/2 stick) butter
- 6 large plum tomatoes, quartered, seeds and membranes discarded, tomatoes diced
- 1 teaspoon chopped fresh thyme.
- 28 oz whole pealed tomatoes
Asparagus Canapes

Cut crusts off bread. Mix cheeses, mayo and egg
- 2 cans asparagus tips
- 1 loaf sandwich bread
- 8 oz Roquefort cheese
- 8 oz cream cheese
- 1 T mayonnaise
- 1 egg, beaten
- butter, melted
Roasted Red Potatoes With Arugula And Goat Cheese

To cook the potatoes, preheat the oven to 300
- Potatoes:
- 3 lbs small red new potatoes (about 12 potatoes), halved or quartered, depending on size
- 12 cloves garlic, peeled
- Coarse salt
- 1/2 c. Olive oil
- Vinaigrette:
- 2 t grainy mustard
- 1 t balsamic vinegar
- 1/2 c. Extra virgin olive oil
- Salad:
- 1/4 to 1 c stemmed arugula
- 4 oz fresh goat cheese, crumbled
- Freshly ground black pepper
- 2 t. Extra virgin olive oil
Apple Tarts Poilane

Position rack in top third of oven and preheat oven to 400
- 1 17.3 ounce package frozen puff pastry (2 sheets), thawed
- 6 to 7 ounce golden delicious apples, each peeled, quartered, cored, and quarters cut into 8 slices
- 4 T packed brown sugar
- 4 t melted unsalted butter
- 1 egg, beaten to blend (for glaze)
Aunt Maureen's Lentil and Celery Root Salad

Cook celery root in a pot of boiling salted water until tender, about 45 min
- 1 - 1 1/4 lb celery root
- 1 c French green lentils
- 6 T olive oil
- 3 T white wine vinegar
- 1 1/2 t minced garlic
- 1 t minced fresh rosemary
- pinch of ground nutmeg
- 1/2 c crumbled blue cheese
Molten Chocolate Cakes With Mint Fudge Sauce

For sauce: stir both chocolates in top of double boiler over barely simmering water until melted
- Sauce:
- 4 1/2 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
- 2 ounces unsweetened chocolate, chopped
- 1/3 cup hot water
- 1/4 cup light corn syrup
- 3/4 teaspoon peppermint extract or 1 t. Instant espresso powder
- Cakes:
- 5 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
- 10 tablespoons (1 1/4 sticks) unsalted butter
- 3 large eggs
- 3 large egg yolks
- 1 1/2 cups powdered sugar
- 1/2 cup all purpose flour

- Streusel Topping:
- 1/2 c butter (1 stick) plus more for pan
- 2 c all purpose flour, plus more for pan
- 1 1/2 t baking powder
- 1/2 t salt
- 3/4 c sugar
- 1 egg
- 1 t pure vanilla extract
- 1/2 c milk
- 5 c wild or cultivated blueberries
- 1 t cinnamon
- 1/4 t salt
- 1/4 c packed light brown sugar
- 1 c flour
- 3 T butter, room temperature
