Radicchio Salad

Heat skillet over medium heat
- 4 oz (about 8 thin slices) pancetta
- 3 heads Treviso radicchio (about 1 1/2 lbs), quartered lengthwise
- 1/2 c walnut oil
- 2 shallots, finely chopped
- 1/2 c ch vinegar
- 2/3 c walnuts, chopped and toasted
- 1/2 t salt
- 1/4 t pepper
- 2 oz Young Pecorino Toscano cheese, shaved
Prosciutto Spiedini Salad

Preheat broiler. Cut fontina into 3/4" chunks
- 8 oz fontina cheese
- 8-16 thin slices prosciutto di parma
- 8 sprigs rosemary
- 2 T olive oil
- 6 c arugula leaves
- 1 T sherry vinegar
- sea salt
- pepper
Party Poulet

Beat together cream cheese, steak sauce, curry and garlic
- 16 oz cream cheese, softened
- 1 T bottled steak sauce
- 1/2 t curry powder
- 1-2 garlic cloves, minced
- 1 1/2 c cooked chicken, finely minced
- 1/3 c celery, chopped
- 1/4 c parsley, minced
- 1/4 c almonds, walnuts, or pecans, toasted and chopped
- party crackers
Pancetta and Egg Sandwich

Fry 2 slices of pancetta and remove from heat
- whole grain bread, toasted and buttered
- pancetta
- egg, cooked
- arugula
- parmesan cheese, shaved
Aunt Maureen's Asparagus

Blanch asparagus. Combine all ingredients, except for asparagus and egg
- 6 T vegetable oil
- 2 T apple cider vinegar
- dry mustard
- 1 T onion, grated
- salt
- pepper
- asparagus
- egg, hard cooked
Mary Beth's Southwest Ceasar Salad

Croutons: Cube bread. Toss with remaining ingredients
- Chili Croutons:
- 1/3 stick butter
- 1 t chili powder
- 1/4 t cumin
- 1/4 t salt
- Dressing:
- 3 t garlic
- 2 shallots
- 2 green jalapenos
- 1 c olive oil
- salt
- pepper
- 2 c cilantro, loosely packed
- 1/2 c red wine vinegar
- 1 egg yolk
- 1/2 t black pepper
- 1 t lemon juice
- 1/2 c Romano cheese
- Salad:
- 2 heads Romaine lettuce
- 2 c corn
- 2 red bell peppers
- 1/2 c sundried tomatoes
- 1/4 c Romano cheese
- roasted red pepper flakes
Mary Maxwell's Rice Salad

Cook rice according to directions, except leave out butter and use 2 c water per box
- Dressing:
- 8 boxes Uncle Ben's original long grain rice mix
- 1/3 c oil
- 4 c whole almonds
- 1 1/2 lb red seedless grapes, sliced
- 1 1/2 lb green seedless grapes, sliced
- 2 c mayonnaise
- 3/4 c honey
- 1/4 c lemon juice
- 1/4 c cidar vinegar
- 1 c parsley, chopped
- 1 c scallions, thinly sliced
- 1 1/2 t salt
- 1 1/2 t pepper
Chilled Pea Soup

Heat oil over medium heat
- Note:
- 1 T olive oil
- 1 onion, chopped
- 1/2 rib celery, chopped
- 1 qt chicken or vegetable stock
- 4 c fresh peas, shelled
- coarse salt
- white pepper
- 2 T unsalted butter
- creme fraiche
- truffle oil
- Frozen peas work well. Shelled peas from the store are bitter.
O'Henry Bars

Combine sugar and syrup in a saucepan over medium high heat
- 1 c sugar
- 1 c light corn syrup
- 18 oz jar creamy peanut butter
- 5 c Special K cereal
- 1 11 oz package butterscotch chips
- 1 11 oz package semi sweet chocolate chips
