Sift together first 5 ingredients
- Frosting:
- 1 1/2 c flour
- 1 c sugar
- 1/3 c cocoa
- 1 t baking soda
- 1 t salt
- 1/3 c oil

- 1 c water
- 1 lb confectioners sugar
- 1/2 c margarine, softened
- 1 t vanilla extract
- 3 T milk
Summer Squash Soup with Garden Tomatoes

Trim squash and cut in half lengthwise, then cut the halves into half moons
- 2 1/2 lbs yellow summer squash
- 1 large onion
- 1 t fine sea salt
- 1 c heavy cream or light cream
- 3 fresh tomatoes

Aunt Beth's Pumpkin Bars

Preheat oven to 350. Mix ingredients
- Frosting:
- 4 eggs
- 1 2/3 c sugar
- 1 c oil
- 2 c flour
- 2 t baking powder
- 2 t cinnamon
- 1 t salt
- 1 t baking soda
- 16 oz can flavored pumpkin
- (if you use unflavored, add 1 t pumpkin pie spice mix)
- 8 oz cream cheese
- 1 stick butter
- 2 t vanilla
- 3 c confectioners sugar

- strawberries

Herbed Potato and Tomato Salad

Cook potatoes in water in a covered pot for 18-20 minutes
- 3/4 lb tiny new potatoes, scrubbed, but not peeled
- 1/2 c plain, nonfat yogurt
- 1 T Dijon mustard
- 2 t white wine vinegar
- 1 T finely chopped red onion
- 1 T finely chopped fresh thyme leaves
- 1 T finely chopped fresh basil leaves (use lemon basil if possible)
- 1 Kirby cucumber, finely sliced
- 1 large ripe flavorful tomato
- pepper
