Chicken Salad

Grilled Onion and Arugula Salad

Don’t peel onions - trim off root and top before cutting each across into 4 circular slices about 3/4" thick
- 4 onions
- 1/2 c olive oil
- salt and pepper
- 3 oz parmesano reggiano cheese
- arugula
- juice of 1 lemon
Vinaigrette

To change flavor a bit add a little Worcestershire sauce to taste
- 3 T white wine vinegar
- 1/2 t Dijon mustard
- salt
- fresh pepper
- 10 T olive oil

Brush olive oil onto bread
- French bread
- olive oil
- tomatoes, sliced
- basil
Pasta with Sausage and Escarole

Bring a large pot of water to a boil
- Healthier version:
- 1 lb rigatoni or other tubular pasta
- 2 T extra-virgin olive oil
- 2 garlic cloves, minced (about 1 T)
- 1 lb hot Italian sausage, removed from casing and crumbled
- 1 c dry white wine
- 1 c heavy cream
- 1/4 c finely chopped fresh flat-leaf parsley
- 2 t finely chopped fresh rosemary
- 1/2 t crushed red-pepper flakes
- freshly ground black pepper
- 1 large head escarole, cut horizontally into thirds and stemmed
- parmesan cheese, for shaving
- substitute heavy cream with 1/2 c half and half
- substitute sausage with turkey sausage
- substitute broth with wine
Grilled Tomato Sandwich

- spinach
- tomatoes, chopped
- munster cheese
- pesto

Black Bean, Corn and Tomato Salad

Whisk together first 3 ingredients
- 3 T lemon juice
- 2 T olive oil
- 1/2 t salt
- 1 15 oz. can black beans, rinsed and drained
- 1 c fresh corn kernels (2 ears) cooked or grilled
- 1-2 plum tomatoes, chopped
- 1 scallion, minced
- 2 T fresh parsley, minced
- dash of hot sauce to taste
Fruit and Grand Marnier

Pour chilled Grand Marnier over fruit and serve

Panthers Pulled Pork with North Carolina BBQ Sauce

BBQ Sauce: Combine all ingredients in a medium pan and bring to a simmer over low heat
- BBQ Sauce:
- 1 1/2 c cider vinegar
- 1 c yellow or Dijon mustard
- 1/2 c ketchup
- 1/3 c packed brown sugar
- 1/4 c molasses
- 1 T ancho chile powder
- 2 t pureed chipotle chilies
- 2 garlic cloves, smashed
- 1 t salt
- 1 t cayenne pepper
- 1/2 t freshly ground black pepper
- *Note: more sauce is needed for a 5 1/4 lb roast
- Roasted Pulled Pork:
- 2 T vegetable oil
- salt and pepper
- 1 5-7 lb pork roast, preferably shoulder or Boston butt
- water or chicken stock
- 12 hamburger buns
- pickle spears (optional)
Roasted Pulled Pork

Preheat oven to 300 degrees
- 2 tbsp vegetable oil
- Salt and freshly ground pepper
- One (5-7 pound) pork roast, preferably
- Shoulder or boston butt
- Water or chicken stock
- 12 hamburger buns
- Pickle spears, optional
- Blue cheese coleslaw, optional
