Lemon Crisp Cookies

Sift flour with salt and baking soda
- LEMON CRISPS
- 1 1/2 cups flour
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1/2 cup butter
- 3/4 cup granulated sugar
- 1 egg, beaten
- 2 tsp. grated lemon rind
- 1 tbsp. lemon juice
Garlic-Roasted Asparagus

Preheat the oven to 425 degrees
- 2 lbs. asparagus, rough ends trimmed, rinsed and dried
- 3 T olive oil
- 1 1/2 T minced garlic
- Salt
- Freshly ground black pepper
- 2 tsp. fresh lemon juice
Shrimp and Scallops with Wine and Vegetables

Peel shrimp. Make a shallow cut lengthwise down back of each shrimp; wash out vein
- 1 pound uncooked medium shrimp in shells
- 2 tablespoons olive oil
- 1 clove garlic finely chopped
- 2 medium green onions sliced
- 1 tablespoon chopped parsley
- 1 pound sea scallops cut in half
- 1/2 cup chicken broth or white wine
- 1 tablespoon lemon juice
- 1/4 teaspoon red pepper flakes
Chickpea Tomato Salad

Delicious, high protein salad
- 2 cans of garbanzo beans/chick peas, drained
- 1 can of red kidney beans, drained
- 6 cloves of garlic, smashed and minced
- 4 stalks of celery, diced
- 2 containers of grape or cherry tomatoes, chopped
- 1 C of chopped cilantro
- 1 C of chopped parsley
- juice of two or three lemons
- 2 T olive oil
- S and P to taste
Tilapia and Asparagus

- 2 tilapia fillets
- 2 tablespoon mustard
- 1 egg slightly beaten
- 1/2 cup finely chopped pecans or other nuts
- Asparagus spears cooked

- 1 tsp vanilla

Tuscan Salmon Fillets

- 1 1/4 pounds salmon fillets
- 1/2 teaspoon salt
- 1/2 teaspoon crushed red pepper flakes

- 4 cloves garlic minced
- 1 cup chopped tomatoes
- 1/2 cup white wine vinegar
- 3 tablespoons chopped fresh basil
Easy Eggnog Pumpkin Pie

- 1 15 oz can of PURE pumpkin..not the MIX
- 1 1/4 C eggnog
- 2/3 C sugar
- 1 1/2 tsp pumpkin pie spice plus some 1 for garnish
- 1/4 Tsp of salt
- 3 large eggs
- 1 9 nch frozen deep dish pie crust
- whipped cream for garnish
Banana Cookies

1 Preheat the oven to 350°F
- 1/2 C unsalted butter, room temperature
- 1 C sugar
- 1 egg, room temperature
- 1 C mashed bananas (about 2 1/2 large bananas)
- 1 tsp baking soda
- 2 C flour
- pinch of salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground mace or nutmeg
- 1/2 tsp ground cloves
- 1 C pecans (walnuts and chocolate chips are fine alternatives)
