Tomato Basil Soup from Ina Garten

Very easy. Takes about 15 minutes of prep work and over and hour of cooking
- 3 pounds ripe plum tomatoes, cut in half lengthwise
- 1/4 cup plus 2 tablespoons good olive oil
- 1 tablespoon kosher salt
- 1 1/2 teaspoons freshly ground black pepper
- 2 cups chopped yellow onions (2 onions)
- 6 garlic cloves, minced
- 2 tablespoons unsalted butter
- 1/4 teaspoon crushed red pepper flakes
- 1 (28-ounce) canned plum tomatoes, with their juice
- 4 cups fresh basil leaves, packed
- 1 teaspoon fresh thyme leaves
- 1 quart chicken stock or water

- PREPARATION TIME: 8 Hours
- COOKING TIME: 1 – 1 1/2 Hours
- 1/2 cup dry white beans, washed and soaked for at least 8 hours
- 8 cups water
- 10 sage leaves or 1 t dried sage
- 3 bay leaves
- 6 branches of thyme or 1/4 t dried thyme
- 4 cloves garlic, peeled
- 3 tbsp olive oil
- 1 tsp salt
- 1 medium onion, chopped
- 1 pound fresh tomatoes or 2 c canned tomatoes, chopped, or 2 c plain tomato sauce
Blackberry Cobbler

1 Preheat oven to 350°F. 2 In a saucepan mix cornstarch, sugar, and water
- Berry Mixture:
- 1 1/2 T cornstarch
- 1/3 C sugar
- 4 C blackberries or boysenberries
- 1/8 C water
- 1 T butter
- 1 T lemon juice
- Batter topping:
- 1 C flour
- 1 C sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 2 T soft butter
- 1 egg slightly beaten
- 3 T of milk
Canadian Bacon Strata

This savory breakfast pudding can be prepared the night before through step 2 and baked the next morning
- Butter, softened (for pan)
- 4 English muffins, split, toasted, and cut in half
- 1/2 pound sliced (about 10 slices) Canadian bacon, halved
- 1 1/4 cups shredded (5 ounces) sharp cheddar cheese
- 1/3 cup finely shredded Parmesan cheese
- 8 large eggs
- 3 cups milk
- 1 1/2 tablespoons Dijon mustard
- Coarse salt and ground pepper
- 1/4 teaspoon hot sauce, such as Tabasco
Low Fat Chicken Salad

In a medium bowl, mix chicken, celery, parsley, and almonds
- 4 oz poached chicken breast, cut into 1-inch cubes
- 1/4 cup coarsely chopped celery
- 1 tsp finely chopped parsley
- 1 tbsp sliced almonds, coarsely chopped
- 2 tsp Dijon-style mustard
- 2 tbsp chicken stock
- 1 or 2 dashes hot pepper sauce
- salt and freshly ground black pepper to taste
