Turkey Chili

Heat 1 tsp butter in a 3-quart saucepan over high heat
- 2 tsp butter, divided
- 1 lb lean ground turkey
- salt and freshly ground black pepper to taste
- 1 medium onion, coarsely chopped (~3/4 cup)
- 2/3 cup coarsely chopped celery (~2/3 stalk)
- 1 clove garlic, minced
- 2 tsp chili powder
- 1 tsp paprika
- 1 tsp ground cumin
- 1/8 tsp ground cayenne pepper
- 141/2 oz plum tomatoes, chopped (canned with juice is fine)
- 1/2 cup chicken stock (or low-fat low-sodium chicken broth)
- 1 bay leaf
Chopped Greek Salad

1. whisk together the first 5 ingredients in a bowl
- 1/4 cup fresh lemon juice
- 1 small garlic clove, minced
- 1 tbsp honey
- 1/4 tsp salt
- 1/8 pepper
- 2 tbsp evoo
- 1.5 heads hearts of romaine, chopped (about 12 cups)
- 1 cup canned chickpeas, rinsed and drained
- 1 small yellow bell pepper, diced (1 cup)
- 1 cup cherry or grape tomatoes, halved
- 1 cup chopped cucumber
- 1/2 small red onion, chopped
- 1/4 cup pitted kalamata olives
- 1/3 cup crumbled feta cheese
- 1/4 cup fresh mint leaves
- 2 whole-wheat pitas, toasted and halved.
Banana Bread

No need for a mixer for this recipe
- 3 * 3 or 4 ripe bananas, smashed
- 1/3 * 1/3 C melted butter
- 1 * 1 C sugar (can easily reduce to 3/4 C)
- 1 * 1 egg, beaten
- 1 * 1 tsp vanilla
- 1 * 1 tsp baking soda
- * Pinch of salt
- 1 1/2 * 1 1/2 C of all-purpose flour

- 1/3 cup canola oil or olive oil
- 3 tablespoons skim milk
- 8 small red delicious apples cored
