Brie in Sourdough

1. Put tin foil on a baking sheet for easy clean up
- Another pretty easy appetizer that you can make ahead up to the point of baking. Then, I pop it in the oven right before the doorbell rings. It will be done in half an hour. This is so yummy.
- BRIE IN SOURDOUGH
- Warm the oven to 325 degrees.
- 1 sourdough round loaf
- 2 Brie triangles
- 1 1/3 C olive oil
- 1 T chopped fresh rosemary
- 1 T chopped fresh thyme
Chicken and Strawberry Salad

Pair this simple, no-cook meal with toasted buttery baguette slices
- DRESSING
- 1 T sugar
- 2 T red wine vinegar
- 1 T water
- 1/8 tsp salt
- 1/8 tsp freshly ground black pepper
- 2 T extra-virgin olive oil
- SALAD
- 4 C torn romaine lettuce
- 4 C arugula
- 2 C quartered strawberries
- 1/3 C vertically sliced red onion
- 12 oz skinless, boneless rotisserie chicken breast, sliced
- 2 T unsalted cashews, halved
- 1/2 C (2 oz) crumbled blue cheese
Peaches and Coconut Smoothie

Blend until smooth and creamy
- 1 cup frozen peaches
- 2 cups whole-fat coconut milk
- 2 tsp pumpkin pie spice (most health-food stores have this in bulk, but you can also use a mix of cinnamon, nutmeg and allspice)
- 1 tsp freshly grated ginger
- 2 heaping tbsp plant-based protein powder (ideally vanilla flavor)
- 1 tbsp ground flax seed (optional
Cucumber Salad

Combine all ingredients in a bowl, toss to coat
- 1-2 large cucumbers (or 4-5 lemon cucumbers), peeled, quartered lengthwise, then sliced crosswise
- 1-2 Tbsp chopped fresh dill, basil, or Thai basil*
- 2-3 Tbsp seasoned rice vinegar
- Salt and pepper to taste
- *To chop the basil, chiffonade it by stacking the leaves on top of each other, rolling them up like a cigar, and taking thin slices from one end to the other.
Rosemary and Garlic Chicken

Preheat oven to 450°F. Rinse chicken and pat dry
- Roasted Chicken with Rosemary and Garlic
- 1 large (5- to 6-lb) roasting chicken
- 11/2 tbsp minced garlic
- 11/2 tbsp chopped fresh rosemary
- 4 medium onions
- 2 whole heads garlic
- 1 tbsp olive oil
Garlic and Red Wine Filet Mignon

Slice into each filet lengthwise, creating a small pocket
- Garlic and Red Wine Filet Mignon
- PREPARATION TIME: 25 minutes
- 4 6-ounce filet mignon portions, each ~2 inches thick
- 4 cloves garlic, thinly sliced
- salt to taste
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1 tbsp olive oil
- 4 oz white mushrooms, thinly sliced
- 1/2 bottle red wine (cabernet sauvignon)

Five Minute Cranberry Walnut Cobbler

This honey dessert is so easy to make and so sweetly satisfying that you will make it again and again
- 2 1/2 C fresh or frozen cranberries
- 3/4 C chopped walnuts
- 1/2 C plus 3/4 C granulated sugar
- 2 large eggs
- 12 T (1 1/2 sticks) melted unsalted butter
- 1/4 tsp almond extract
- 1 C flour

Turkey Stew in Slow Cooker

Place turkey pieces, skin side down, in a slow cooker set on high, and sauté 3–5 minutes to release fat
- This warm, welcoming one-dish-meal is perfect in fall or winter.
- PREPARATION TIME: 15 minutes
- 2 lb turkey pieces
- 1 medium leek, sliced
- 2 stalks celery, chopped
- 2 tsp fresh thyme leaves
- 2 tsp fresh oregano leaves
- 1 tsp Spike (or Mrs. Dash) vegetable seasoning (or salt)
- 1 cup winter squash, peeled and cubed
- 1 medium carrot, chopped
- 1 stick cinnamon
- 16 oz diced tomatoes (canned is fine)
- 2 cups water (or chicken stock)
- 1 cup cooked lentils
Mini Crab Cakes with Lemon Dill Aioli

- 3/4 cup Safeway SELECT™ Mayonnaise
- 2 tsp. finely shredded lemon peel
- 4 tsp. lemon juice
