Low Fat Chicken Salad

In a medium bowl, mix chicken, celery, parsley, and almonds

Mango and Peach Smoothie...CLEAN DIET

- Ingredients
- 1 large nectarine, quartered
- 1 mango, flesh removed from skin (discard skin),quartered
- Handful of ice
- Coconut milk to taste
- 2 heaping tbsp plant-based protein powder (ideally vanilla flavor)
- 1 tbsp ground flax seed (optional)
- Stevia (optional if mango and peach are not ripe enough to be sweet)
Fast Tomato Salad with Dijon Vinaigrette

Whisk together vinegar, oil and Dijon in a bowl; season with salt and pepper

- 2 tsp olive oil
- 1 tsp Dijon mustard

Roasted Tomato Basil Soup

Preheat over to 400 degrees
- 3 lbs ripe plum tomatoes, cut in half lengthwise
- 1/4 C plus 2 T olive oil
- 1 T kosher salt
- 1 1/2 tsp black pepper
- 2 C chopped yellow onions (2 onions)
- 6 garlic cloves, minced
- 2 T unsalted butter
- 1/4 tsp crushed red pepper flakes
- 1 28 oz can plum tomatoes with their juice
- 4 C fresh basil leaves, packed
- 1 tsp fresh thyme leaves
- 1 quart chicken stock or water
Coriander Chicken

Brown the chicken in butter and oil in a large heavy skillet over medium heat

- 4 tbsp olive oil
- 4 large cloves of garlic, crushed
- 1 tsp turmeric (or saffron)
- salt and freshly ground black pepper to taste
- 1 sprig of fresh cilantro, finely chopped (or 2 tsp ground coriander)
- 1 cup (or more) water
- 1/4 lb purple olives, pitted
- 1 lemon, sliced
