Rolled Chicken and Asparagus

Cut chicken breasts into 8-10 strips, about 1 x 6 inches each
- 2 chicken breast whole, boned and skinned
- 30 fresh asparagus thin ones, if possible
- 2 tablespoons fresh lemon juice
- 1 1/2 tablespoons olive oil
- 1/4 cup chopped green onions
- 1 teaspoons salt
- 1/2 teaspoon pepper
- 2 teaspoons sesame seeds lightly toasted
Pomegranate Fizzes

For syrup, place mint leaves in a pitcher
- 1/4 C Fresh mint leaves
- 4 C pomegranate juice or cranberry juice
- 1/4 C sugar
- 1 2-liter bottle carbonated water
- ice cubes
- Fresh mint sprigs
- pomegranate seeds
Stir Fried Chicken and Vegetables

Heat oil in large pot. Add juice of one lemon
- 1 pound chicken tenders cut into long, thin pieces
- 2 tablespoons olive oil
- 1 bundle asparagus spears cut into two inch pieces
- 1/4 pound sliced mushrooms
- 1/4 head cauliflower chopped
- Broccoli chopped
- 1/2 onion chopped
- Salt and pepper to taste
- Juice of two lemons
Turkey Sausage Patties

Combine turkey , mushrooms, parsley and dry spices in a large bowl
- 1 pound ground turkey breast
- 1/2 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon coriander
- 1/4 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1/2 cup sodium and fat-free chicken broth
- 1 cup diced mushrooms
- 1/4 cup parsley
Baked Tilapia with Tomatoes and Olives

Preheat oven to 400 degrees
- 6 tilapia fillets
- 1/4 cup extra virgin olive oil
- 4 sprigs thyme
- 3 tomatoes seeded and chopped
- 1/2 cup coarsely chopped green olives
- 2 cloves garlic minced
- 1/2 cup finely chopped red onions
- 1 tablespoon fresh lime juice
Avocado Fiesta Salsa

In a medium bowl, mash the avocado with a fork and combine with the remaining ingredients
- 2 avocados, peeled and pitted
- 4 tomatoes, chopped
- 1/2 C chopped onion
- 2 garlic cloves, minced
- 1/2 tsp ground cumin
- 3 T chopped fresh cilantro
- juice of one lime
- juice of one lemon
- salt and pepper
Garlic Knot Rolls

Quick and easy
- 1 tube..12 oz...refrigerated buttermilk biscuits
- 1/4 C canola oil
- 3 T grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried parsley flakes
Blueberry Quick Bread

Heat oven to 375. Coat bottom and halfway of sides of an 8 1/2 x 4 1/2 inch loaf pan with nonstick spray
- 1 3/4 C flour
- 1 C blueberries
- 1/4 C yellow cornmeal
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 C sugar
- 2 large eggs
- 1/2 C milk
- 1 C unsalted butter, melted
- 3 T lemon juice
Bonnie's Grilled Salmon

Soak plank in warm water for at least 20 minutes
- 1 cedar plank
- 1 small onions sliced
- 4 rosemary sprigs
- 4 thyme sprigs
- 1 1/2 pounds salmon fillet
- Olive oil for rubbing on salmon and plank
- Salt for rubbing on salmon
- 3 lemons sliced
- Pepper for rubbing on salmon

- 2 C of pancake mix
- 1 1/2 C water
- 2 C fresh blueberries
- Butter to grease frying pan between each batter pouring
