Strawberry Smoothie

Just before serving, in blender at high speed, blend berries, banana, milk and vanilla until smooth
- 1/2 cup strawberries, frozen
- 1 medium banana, ripe
- 3/4 cup skim milk or nonfat yogurt
- 1/2 teaspoon vanilla extract

1) Beat first 5 ingredients together until smooth
- 1 cup shortening (part butter is ok)
- 2 cups sugar
- 1 tsp vanilla
- 2 cups persimmon pulp
- 2 eggs
- 4 cups flour
- 2 tsp soda
- 1 tsp salt
- 1/2 tsp nutmeg
- 1 1/2 tsp cinnamon
- 1 1/2 cup raisins
- 1 cup nuts

Sweet Green Smoothie...Spinach and Mango...clean diet

Quick and easy. Try to use a ripe and sweet mango
- 8 oz water
- 2 giant handfuls of spinach
- 1 mango, peeled and diced
- 2 heaping tbsp plant-based protein powder (ideally vanilla flavor)
- 1 tbsp ground flax seed
- If Mango is not ripe and sweet, you can add a few teeny scoops of Stevia.

- 1 chicken breast, split in half lengthwise, then cut into thin strips
- 1 fennel bulb, remove core, slice thin
- 2 cups sliced crimini or white button mushrooms
- 1 cup chopped raddichio (or any hearty leafy green like kale or spinach)
- 1 1/2 cups cooked wild rice (see below)
- 2 cloves of garlic, peeled and minced
- 2 tbsp fresh oregano, roughly chopped
- 2 tbsp olive oil
- Zest of 1 lemon
- Sea salt to taste

Put four martini glasses in the freezer to chill for at least 30 minutes
- Ice cubes
- 1 cup cranberry juice
- 1 cup fresh tangerine juice
- 1/4 cup fresh lime juice
- 4 lime zest twists
Quinoa and Cranberry Salad

Rinse quinoa in fine sieve to remove bitterness
- 1 C dry quinoa
- 1 1/2 C chicken stock
- 1 T chopped fresh parsley
- 1 T chopped fresh chives
- 1/3 C chopped pecans
- 2 T lemon juice
- 2 T olive oil
- Black pepper to taste
Poached Salmon

Put wine, water, dill, parsley and onions in a saute pan, and bring to a simmer on medium heat
- 1 to 11/2 * 1 to 11/2 lbs salmon fillets
- 1/2 * 1/2 C dry white wine (a good Sauvignon Blanc)
- 1/2 * 1/2 C water
- * A few thin slices of yellow onion and/or 1 shallot, peeled and sliced thin
- * Several sprigs of fresh dill or sprinkle of dried dill
- * A sprig of fresh parsley
- * Freshly ground black pepper
Artichoke Caviar Dip

Drain caviar of all fluids
- 4 hard boiled eggs peeled and chopped
- 1 cup mayonnaise
- 2 cans artichoke hearts chopped
- 8 green onions sliced both green and white parts
- 1 o ounces black caviar drained
BBQ Chicken Drumettes

- 35 drumettes or wings
- 1 stick butter
- 1 cup brown sugar
- 1/2 cup tamari sauce
- 1/2 cup dry red wine
- 2 teaspoons dry mustard
- 2 large garlic cloves, crushed
- 1/2 cups fresh lemon juice
- Fresh black pepper to taste
